I was determined to find a recipe and follow it from beginning to end...this one wasn't bad for a recipe beginner like me...I took a few liberties...I made mine with chicken thighs instead of breast but it turned out just as well! Also, I used regular coconut milk instead of light. I invited some friends over and the whole thing was gone. Not bad!

Husband loved it, just kept saying it was a keeper but it was okay for me. I added more onion (Strips)to coconut sauce and marinaded the chicken for an hour. Also added at least a tablespoon of curry powder to add some spice to the coconut sauce. Used half a jalapeno also. Will add some more salt to taste next time. Was very good with the Brazilian white rice(One this site) and personal mango salsa. Parsley unnecessary. Was very good! Will make again for husband! Maybe use the marinade on chicken drumsticks on the BBQ next time and put the Coconut mixture on top of the rice on the side.

My boyfriend wanted a chicken dish with coconut milk and I wanted something other then curry. I tested this out and he's still raving. I didn't have all the ingredients, so I tried a few other options and it still was great. It probably would have been even better if I had made it exactly to the word, but it was great!

This is the second time that I have made this dish. The first time it was WAY too hot but I thought with a few changes I could get a dish that everyone could enjoy. I did not have Turmeric or fresh ginger. I omitted the turmeric and used powdered ginger. I completely omitted the cayenne since my Cumin is hot enough. I also stirred in a small can of crushed pineapple and used mild Rotel for the tomatoes. I also omitted the Jalepenos. Served over rice with a garnish of Cilantro it turned out edible & delicious for this family of Minnesotans. Thanks!

Brilliant!!! Just made it and what complex flavours! Substituted the chopped tomatoes for half a tin of peeled, choppped tomatoes - worked just as well. Use normal coconut milk instead of light - not much difference in calories, but HUGE difference in taste...

Out of the ordinary -- exotic-- something different! Enjoyed it very much. Served with rice and a baked sweet potatoe to round out the flavors.

This has great flavor. A new chicken favorite for my household. Nice amount of spice, although I only used 1 pepper. To complete the meal, I made the Brazilian rice from this site and string beans. The combination of the rice and string beans helped with toning down the spice, but a great meal nonetheless.

I made this for Sunday night dinner and the pan was basically licked clean! Even my picky brother loved it. Definitely recommend to anyone looking for a new and interesting dish.

This recipe was great--very flavorful, even without the jalapeno. I was cooking for 6 kids and their adults and wanted to make sure the kids enjoyed it. They did!

Pretty good- very spicy. I cut the chicken up into bite size pieces. I didn't have any coriander so I substituted dried basil. Next time I would cut back on the cayenne by half, it overpowered some of the other flavors. I also added salt and pepper and thought the dish was very flavorful. I served with Brazilian White Rice (also from this website) and it complimented the dish well.

Pretty good.. a little too spicy for me and i even omitted 1 jalapeno.. next i wont put the cayenne in or just 1/2tsp. Husband really like it too.

This chicken turned out great! I added extra turmeric and cumin to the sauce. I also used canned diced tomatoes as I couldn't find nice ripe tomatoes this time of year. Rave reviews all around, thanks!

I was very excited at how robust all the flavors made this recipe sound, but this recipe was by far, not at all what it's cracked up to be. Everyone raved about how great the sauce was, but that was most horrific (very bland) part to me.I will never make this again. Do yourself a favor and keep looking for a great recipe, cuz this ain't it.

My husband lived in Brazil for a while and he really enjoyed this meal. It was a little spicy for me, so next time I will cut back on jalapeƱo.The chicken flavor did resemble curry, but we liked it!

I was pleasantly surprised at how good this dish was! I tried it because I thought it might be good, but it was just great!!! Don't forget to season the chicken and the sauce with salt and pepper to taste. I think that maybe a couple of reviewers may have forgotten, which led to their conclusions that this was bland. It was absolutely delicious! Thanks!

This was outstanding. Followed the instructions exactly. The only change I will make next time is cutting the chicken in bite seze pcs after cooking,then add to the sauce before removing from the heat and simmer just a minuet, to soak up some of the wonderfull falvor.

We are in love with this! I left off the cumin, and only had ground ginger, but who care? It's not that difficult to make if you just stay calm and organized. Served with fried plantains (from this site) and rice.
