Brandied Candied Sweet Potatoes

"This has been a Thanksgiving favorite of ours for many years because it is different from the many mashed sweet potatoes recipes."

INGREDIENTS

  • 2 pounds sweet potatoes, peeled and diced
  • 1/2 cup butter
  • 1/2 cup packed brown sugar
  • 1/2 cup brandy
  • 1/2 teaspoon salt

DIRECTIONS

  1. Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil. Cook 15 minutes, or until tender but firm. Drain, and set aside.
  2. In a large skillet over low heat, melt the butter. Stir in the brown sugar, brandy, and salt. Add the sweet potatoes, and stir to coat. Cook, stirring gently, until sweet potatoes are heated through and well glazed.

This was fabulous! I cut the recipe in half, and I shouldn't have, because there are no leftovers. The recipe doesn't say to precook fresh yams or sweet potatoes, but it's necessary. I baked mine instead of stovetop, at 350 degrees for about 1 hour. Came out perfect.

This was a super-easy recipe and was a big hit at Thanksgiving. I would definitely recommend it. Comments I received were that this recipe had the exact sweetness required for a sweet potato recipe, and that most recipes for sweet potatoes are too sugary. This recipe just enhanced the flavor of the sweet potato and did not overpower it. I think they were cooked in less than 35 minutes.
