This chicken was AWESOME! It is so juicy and flavorful. I was a little worried at first, with the smell being a little overwhelming when I first began cooking it. But I simmered for the length the recipe states and it quickly began to smell wonderful. Try serving over pasta!

Mmmm, delicious, and the man of the house really enjoyed it, too. I liked that it was simple, and used ingredients I already had, plus it was fast. The balsamic vinegar reduces, and gets sort of thick and syrupy; there's a really pleasant tanginess about it. I served this with Garlic Parmesan Orzo, and will happily make it again.

This was great. I made very few changes. Just halved the vinegar and added chicken broth as others suggested and also added some mushrooms and garlic. You can also make a quick cacciatore with this by subbing the vinegar for a can of beef broth and sauteing baby bella mushrooms (serve with wide egg noodles). Thanks for the recipe!

awesome! Must make a again. I used this recipe as a rough guide. Used 2 large chicken breasts, 1 onion, 2 cloves garlic, 2 T olive oil, 1/2 big can of diced tomatoes, good big swig of balsamic vinegar, generous couple of pinches of italian herbs, added one can of artichoke hearts. cooked for 20 minutes after braising, uncovered, and chicken was nice and tender. Served with greenbeans and rice. Boyfriend loved it.

This was really tasty! My husband and I both loved it. We followed the recipe to the T (only reducing some of the olive oil) and the flavors blended together so nicely. The chicken was incredibly juicy and tender. We had it with brown rice and the Healthy Garden Salad from this site and it was a perfect, low-cal little meal.

I took the advice of some other posters and cooked this in the crock pot, with 1/4 c. balsamic and 1/4 c. chicken stock. I also used fresh tomato instead of canned. It came out really good, but next time I think I will use the full 1/2 c. balsamic.

Very good. I didn't reduce the amount of balsamic vinegar like other reviewers suggested, and found it to be fine. I let the sauce reduce while waiting for my veggies. I'll make this again.

The only reason I give this a 4 instead of 5 is personal taste - I like balsamic to an extent but don't love it. For people who do love balsamic, I am sure this will get 5 stars. The only thing different I did to this was add a bit of fresh minced garlic. This recipe was very easy and took minimal time. I served it with steamed broccoli - some of the sauce from the chicken got on the broccoli and it was a perfect seasoning for the veggies. I will more than likely make this again but will prob cut the balsamic with chicken stock next time for a more mild balsamic flavor.

Yummy! I used fresh minced garlic instead of garlic salt. Once the chicken was done, I removed it from the pan and brought the remaining sauce up to a boil to thicken it. This was delicious served over steamed asparagus and potatoes.

Wonderful! I made it for 3 lunch bentos today! Shared it with 2 of my sisters and we love the sauce! I substituted 1/2 the Balsamic Vinegar for Chicken stock as recommended by some of the reviewers. Yummy! Will definitely cook this again, SOON!

This chicken was great, easy to prepare and tasted delicious. I halved the amount of balsamic vinegar as sugested because I was concerned the flavor would be too strong for the kids. Everybody enjoyed it.
