INGREDIENTS
4 2/3 cups uncooked bow tie pasta
12 ounces boneless, skinless chicken breasts, cut in 1-inch strips
1/2 teaspoon salt-free lemon-pepper seasoning
2 garlic cloves, minced
1 tablespoon canola oil
1 cup chicken broth
1 cup frozen peas, thawed
2/3 cup shredded carrots
1/4 cup cubed reduced-fat cream cheese
2 teaspoons lemon juice
1/2 teaspoon salt
1/3 cup shredded Parmesan cheese

DIRECTIONS
Cook pasta according to package directions. Meanwhile, sprinkle chicken with lemon-pepper. In a large nonstick skillet, stir-fry chicken and garlic in oil until chicken juices run clear. Remove and keep warm. Add broth, peas, carrots, cream cheese and lemon juice to the skillet; cook and stir until cheese is melted. Drain pasta. Add pasta, chicken and salt to vegetable mixture; heat through. Sprinkle with Parmesan cheese.

Nutritional Analysis: One serving (1-1/2 cups) equals 399 calories, 11 g fat (4 g saturated fat), 64 mg cholesterol, 824 mg sodium, 42 g carbohydrate, 4 g fiber, 33 g protein. Diabetic Exchanges: 3 lean meat, 2 starch, 1 vegetable, 1 fat.

As is, it's only fair in the flavor department. I usually double up on the lemon juice, seasoning and sometimes garlic. But, it is a nice creamy sauce without being too greasy or heavy. Honestly, the carrots could be left out.

I agree with McSnick, but I will try again and add some rosemary, butter, lemon zest, and maybe even more cream cheese.

LOVE IT!!! But after I read some reviews saying it did not have much flavor I doubled all the spices and it turned out fabulous! Make it all the time!

Thought it was great. Put the chicken, oil, garlic, and chicken broth in the crockpot for a couple of hours. Then added remianing ingredients except the pasta and peas. About 10 minutes before serving I added the cooked pasta and peas. Also changed it from a lemon chicken to a lime by using lime pepper and lime juice. I thought it was awesome, but my husband thought it would be better with the lemon juice. I will be using this recipe again!!!!

I was really hoping this was going to be delicious, but it was just okay. It wsn't *bad* tasting at all, it's just that it didn't have much taste. The lemon flavor didn't come through, even after I added extra lemon pepper. It was easy to make, but I won't be making it again.

Thanks so much for this recipie. It sounded a little different, but it turned out really lovely. Next time I might add some sliced red pepper for even more veggies, but it was quick, healthy and very good! The only change I made was seasoning the chicken with lemmon/pepper seasoning that had salt - and omitting the salt later. Cheers!

I really enjoyed this, but I did make some changes based on other reviews. I used the zest and juice of a whole lemon, and that really seemed to brighten the flavor quite a bit. I also used whole wheat pasta instead of regular. It seemed like a ton of pasta for the amount of sauce, so I ended up putting less into the pan.
