I first had this summery salad at a family reunion. It's one of my husband's favorite dinners. Sometimes, we leave out the chicken and serve it as a side dish instead. --Jennifer Madsen of Rexburg, Idaho.

'This crisp, fresh-tasting slaw keeps in the fridge for several days,' notes Deborah Moore-Dedenbach from Big Bay, Michigan. It's a bargain, too, at 13 cents a serving. 'We live about an hour from the nearest major city, so shopping trips can be few and far between. I often buy cabbage rather than lettuce for salads, because it stores longer,' Deborah says.

A zippy dressing lightly coats the tossed mixture of pasta, chicken, tomato and onion.

'The recipe came from a neighbor who invited us for lunch after church,' Kathy recalls. 'I bring it to potlucks and family get-togethers. It's very versatile. You can substitute lettuce for the cabbage and add almost any fruit. Almonds, peanuts or sunflower kernels can be used in place of the pecans,' she adds.
