Oh my gosh, this is the absolute best gumbo I have ever had. I wanted to surprise my neighbor, who is from Louisianna, with some. She was shocked. Wanted the recipe and said it was the best gumbo she had ever eaten. I am used to having Andouille sausage in gumbo and could not get any around here. So I used beef smoked sausage instead. Just sliced it and browned in on both sides before putting in the gumbo. We are not celery eaters so I chopped 2 celery stalks to oblivion and that was all I used. I also did not use shrimp, we really just like chicken and sausage in our gumbo. This gumbo was fantastic the next day and it froze well. I hope we get another cold spell so I can make another batch.

Excellent Gumbo! I added mroe seafood like fresh crab meat and fresh shucked oysters. Next time I'll add more tomatoes and beer!

I made this recipe for a group of about 10 people for a football game and everyone loved it!! I served it with rice and cornbread muffins. I also like some others who have tried this recipe used less chicken stock and I tried Emeril's kicked up sausage insted.

Very good! Being from New Orleans I wanted to find a really good gumbo recipe for a party I was throwing. People know their gumbo down here. This one was a big hit. I was asked to e-mail this recipe to most of them. Will make again.

This recipe was impressive. But if you want some real gumbo try the chicken andouille gumbo posted on this website. It is full of flavors and spice.

This gumbo was awesome! I added some green pepper, extra spicy Cajun seasoning and some file to the individual servings. I made a chicken the night before and used the broth and meat from that. The heat was just right and my 13 month old gobbled it up. I will for sure make this again and again...great recipe!!!!

I accidentally bought "fire roasted" tomatoes and green chilis; the end result was wonderful. Also, because this will be used for lunches for a whole week (and shrimp does not keep more than a couple of days), I cooked the shrimp inside a fry basket suspended in the cooking gumbo until they just curled and took them out and froze them; they will be added, straight from the freezor, a few at a time as lunch is packed.

I've lived in south Louisiana all of my life and this is the best recipe for gumbo I have ever found. I didn't have chile peppers both times I've made it and it still turned out great. When and if it gets cold enough down here I'll definitly be making again.

I used 2 lbs boneless chicken thighs, 1 lb kielbasa type sausage and 1 lb of pork sausage links that were tomato garlic flavored. I did not like the texture of the latter sausages in my gumbo. I also added 2 lbs frozen okra. Flavor on first night tasted too much like the beer I added. I'm not a fan of beer. However, the next day, after the flavors melded. Holy cow! This was awesome! Today my dh took for lunch and he was full of compliments about the flavor. I will make again. Next time with the meat as indicated.

Very good recipe. I've never made gumbo before, but it wasn't as hard as I thought... just time consuming. I made a few little modifications due to lack of ingredients. I used sweet italian sausage. I also forgot to buy any red chiles, but witha 1/4 cup of Old Bay it had enough kick for me! Also used leftover chicken from the night before. Reheats very well!
