While these were really good, my only complaint is the peppers didn't get done enough for my taste; I don't care for cripsy stuffed peppers. The filling is fantastic--I did add some minced garlic. When I make them again, and I will, I will parboil the peppers and add a bit more red pepper flakes to the sauce. I served them with garlic toast and tossed salad.

This recipe was awesome!! It tasted like something served in a fancy restaurant! I only changed 2 things as others mentioned. I sauteed the carrot and celery in 3 large cloves garlic (we love garlic) and I sprinkled the panko bread crumbs on top before baking....oh, and I was a little generous with the red pepper flakes. My family loved it. I can't wait to make this recipe for other people. And, lastly, it was really easy to make and didn't make a big mess with lots of dirty pots and pans. thanks for the great recipe!!

Pretty good recipe: I added garlic and onion for more flavor and used red, yellow, and green bell peppers for more variety. The next time I make this, though, I will use more spices as it didn't have enough punch for me.

Fantasic recipe as is! I like to prepare things ahead of time for quick and easy dinner, this freezes very well and takes no more time to make a second batch! Also works great as a casserole when layered with peppers from the garden (sweet bananna, bell, even a mixture including some hot peppers), just freeze in advance and then thaw and bake as directed! Wonderful way to use up small peppers from the garden!

Delicious! I used ground turkey and fat free half and half. Thats the only changes! They were great! I do like the red and orange peppers better than the green also!

These stuffed peppers were fantastic. The recipe did not fill up 6 bell peppers so I doubled the recipe. My peppers may have been to big, I'm not sure. I made 2 small changes: first, I sauteed onion in with the carrot and celery and I used regular bacon because I did not have the pancetta bacon.

SOOOO good! I've made stuffed peppers before, but never as good as these were. Maybe it was the pancetta that made the difference. The only change I'd make next time would be to double the recipe.

I had to change the amounts on a couple of things here and there and I added some spices. I also used red bell peppers because they're sweeter and topped them with shredded Italian cheese blend and put them under the broiler to brown the cheese up at the end. They were fantastic! Thanks!

We loved this! I made a few changes: added onions to the carrots & celery, blanched the peppers for 3 minutes prior to stuffing, and used orzo instead of rice. I also thought the amount of stuffing was appropriate for 4 peppers rather than 6, and we thought it tasted better in yellow and orange peppers than in green.
