This is a very, very healthy and hearty salad with a fabulous grapeseed oil and balsamic vinegar dressing. It offers a quartet of greens - escarole, romaine, radicchio and green-leafed lettuce, as well as peppers, green onions and cherry tomatoes. Serves six.

Sylvia's Easy Greek Salad

This is a classic, but easy Greek salad with a simple, simple dressing. Chop and dice all the veggies - bell peppers, cucumbers, tomatoes, red onions, and olives. Then whip up the vinegar and oil dressing. Toss one with the other, and add crumbled feta cheese.

Chopped veggies - tomatoes, red onions, cucumbers, and green peppers. But in this version, the dressing is crisper - only olive oil with a splash of lemon juice. Chill and just before serving, sprinkle crumbled feta on top. 

Macaroni and Cheese Salad

This is pure picnic food, but can work as a winter 's evening supper as well. Macaroni noodles are cooked up and splashed with vinegar and then folded into chilled veggies - tomatoes, cheese, peppers, green onions, and celery. Then comes the herbed mayonnaise. Serves six.

Marilyn's Special Salad

Hearty and simple. A splash of lemon juice and garlic dress the romaine, bacon, tomatoes and two kinds of cheese in this salad. Don 't forget the toasted almonds! Serves four.
