"Savory, smoky, easy-to-make chili. Sometimes I add a can of corn, too. Maybe have some sweet corn bread muffins with honey on the side. You could use black beans, pinto beans, pink beans, or small red beans in place of the kidney beans."

yellow onion, chopped
1 1/2 pounds
3 (15.5 ounce) cans
kidney beans, rinsed and drained
1 (14.5 ounce) can
fire-roasted diced tomatoes
liquid smoke flavoring
salt and ground black pepper to taste
hot pepper sauce (such as Tabasco®), or to taste
Bob's Little Known Less Cared About Chili Haiku: "This should've been great, but there was too much cumin. I will make again!" Bob's chili was pretty good, but 1 TB of cumin (and we really like cumin!) was just the dominant flavor here. Put some Fritos and cheese on top, along with extra Chipotle Tabasco, but the cumin was still all we could taste. A chili that next time around will be 5 stars for us, I'm sure.
I loved this and I wouldn't change a thing. The flavors were awesome and like a lot of soups and stews tasted even better the next day. This will definitely be in my winter rotation!
