Original Recipe Yield 8 servings

Ingredients

  • 2 pounds sweet potatoes, peeled and quartered
  • 3 1/2 pounds bone-in chicken pieces
  • 1 cup pomegranate juice
  • 1/4 cup sherry vinegar
  • 1/4 cup olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon ground ginger
  • 4 cloves garlic, crushed
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bunch green onions, sliced
  • 1/4 cup pomegranate seeds

Directions

  1. Arrange sweet potatoes and chicken pieces in a 9x13 inch baking dish. In a small bowl, mix together pomegranate juice, sherry vinegar, olive oil, brown sugar, ginger, garlic, and salt and pepper. Pour over chicken and sweet potatoes. Cover, and marinate for 1 to 2 hours, turning once.
