This recipe is definately a keeper. I substituted whole wheat for white flour, half brown sugar for white and half applesauce for oil. I made it in 2 9x5 loaf pans instead of the mini loaf pans & took one to work. It's a wonderful alternative to the traditional zucchini bread & everyone that tried it loved it.

This is the best bread recipe I've made yet! I took it to my MOPS breakfast meeting and everyone wanted the recipe! My modifications: I used 1/2 applesauce and 1/2 oil. I also used 1/2 whole wheat flour. I made a crumb topping based on some other reviewers ideas. It was delicious! I will definitely make this again.

WOW! This is amazing bread!! One of the best recipes I have ever taken from this website. The only change I made was to cut down on the sugar a little, but everything else was spot on!! The texture is very good and the cooking time is perfect! I actually had enough batter to make 4 mini loaves and 2 ramekins! Will 100% make again!!

Thanks for sharing this great recipe. We really loved the bread and are sharing it with friends and family, too! I took advice from other reviewers and replaced half the oil with applesauce. Otherwise, followed recipe precisely (including the baking time, which is spot-on!), to great effect. Next time, I might try adding a little sugar to the loaf pans and the batter-tops for a more interesting crust. Definitely a keeper!

Love it! My husband and kids don't like zucchini, but i had gotten a few from family. I made this recipe and told them it was blueberry bread-they inhaled it! After, I told them there was grated zucchini in it, they were surprised!

Loved IT!!! Changes: 1/2 applesauce 1/2 Oil (in place of 1 Cup Oil) 1C whole wheat flour replacing 1C AP flour Added more walnuts Baked 2 loaf pans @ 350 for 1hr 15min - - - Perfect! My picky girls (teenagers) and No veggie eating hubby loved it!!!! They would not let me take the 2nd loaf to work - they hid it in fridge!

This recipe is wonderful! I baked for about an hour and twenty minutes. I dusted the inside of the pans with sugar, and this made a crispy, sweet crust. It was even better the second day.

Moist, flavorful and delicious! It can be much healthier too! I substituted 2/3 cup applesauce for oil, using just 1 T oil. also, i used just 1 1/2 cups sugar which was plenty!! I highly recommend making this one!

this recipe was really good but on a healthier note i made some minor adjustments. i used 3 egg whites.3/4 cup applesauce and 1/4 canola oil in place of veg. oil.2 cups of brown sugar in place of the white. used whole wheat flour instead of regular flour. was just as good. i love this recipe. its even good without the blueberries.

Pretty good, I don't think that either the blueberry or the zucchini shine more than the other. They just sort of get along really well, and make a tasty bread. I didn't add the topping- cutting calories- and it was still really good.
