"I received this recipe from a co-worker's wife and it's become one of my favorites. The addition of blueberries gives this salad a different twist."

INGREDIENTS
1/2 cup vegetable oil
1/4 cup raspberry vinegar
2 teaspoons Dijon mustard
1 teaspoon sugar
1/2 teaspoon salt
1 (10 ounce) package fresh spinach, torn
1 (4 ounce) package blue cheese, crumbled
1 cup fresh blueberries
1/2 cup chopped pecans, toasted

DIRECTIONS
In a jar with tight-fitting lid, combine the first five ingredients and shake well. In a large salad bowl, toss the spinach, blue cheese, blueberries and pecans. Add dressing and toss gently; serve immediately.

This recipe rocks! When I made it I didn't have any dijon mustard on hand, so I substituted it with honey mustard and it worked nicely. Since then, I have made it with the dijon and it tasted just as good. Who would have thought blue cheese, blueberries and baby spinach would be such a wonderful combination. I'll be using this recipe for years to come.

This was so yummy! I didn't have bleu cheese so I used reduced-fat feta. The pecans were a MUST...made the salad excellent! Everyone asked for the recipe!

This was great! I added a cup of blueberries instead of a half cup and it was too much. I'd stick with a half cup instead!

VERY good. I used oilive oil and balsamic vinager. I also used roasted pignoli nuts instead of pecans. You can't go wrong with the salad.

YUMMMMMM!!!!!!!! I've been on a total salad kick, and this recipe was perfect!!!! I left the recipe at work though, so I made a different dressing- 1/2 cup of veggie or olive oil, 1/4 cup raspberry vinegar, 1/2 onion, 2 garlic cloves, salt, fresh ground pepper, blended in food processor. DELICIOUS!!!! LOVE the blueberries, I used walnuts instead of pecans, and I used Feta cheese instead of blue cheese. I also added chopped pears and red onions- can't get enough of it!!!

Wow, this was delicious! We absolutely loved it! I used walnuts & balsamic vinegar because that's what I had on hand. I also had frozen blueberries, so just thawed some out & they worked just fine. We will definately be having this again!

Scrumptious!! I also added some thin sliced red onion. Loved the flavors of the sweet berries, tangy blue cheese and the red onion...sounds wierd, but really great contrasts of flavor!! Will make again.

Yummy! I used candied pecans (that's what the store had) and only half the dressing. My gang ate it up and asked me to make it again the next night!
