Blue Cheese Bread Pudding

Directions

  1. Melt the butter in a skillet over medium-low heat, and cook the onion and garlic 20 minutes, until soft and golden brown.
  2. Arrange 1/2 the bread cubes in the bottom of a 9x13 inch baking pan. Layer with 1/2 the blue cheese and the onion mixture. Top with remaining bread cubes and cheese.
  3. In a small bowl, whisk together the eggs, egg yolks, heavy cream, salt and pepper. Pour over top layer of bread cubes in pan. Set aside for 30 minutes.
  4. Preheat oven to 375 degrees F (190 degrees C).
  5. Bake pudding 40 minutes in the preheated oven. Cover pan and continue baking 15 minutes, or until set and golden brown. Allow to sit 15 minutes before serving.

Made as directed with maytag blue cheese, needed a little larger pan though! Fabulous flavor and a HUGE hit at our Christmas dinner with Prime Rib.

I don't know what this is, but it doesn't fit any conventional definition of a bread pudding. It's an interesting dish, but don't try it if you're looking for a bread pudding dessert.

We love this dish with some spicy ribs. The blue cheese really helps cool your mouth.

This dish is every bit as decadent and amazing as it sounds, though realistically I'm not sure what I could ever serve it with because it is SO rich and heavy. Wonderful, but whoa. It's definitely a special occasion-type thing. And I agree with @Laurie in PA about needing a bigger pan: the took about an hour to set - not 40mins - because it was really jam-packed into that 9X12 dish.
