Using a water roux -- a paste of hot water and flour that rests overnight -- helps this white yeast-risen bread retain moisture, and creates a fluffy, soft loaf. It's a technique used in China and Japan for a long time, and it gives the bread a silky texture.

Anytime is the right time for a comforting slice of homemade bread. These loaves are especially nice since the crust stays so tender. This recipe is my husband Nick's favorite. He makes most of the bread at our house. -Joanne Shew Chuk, St. Benedict, Saskatchewan

There 's no waiting for the yeast to proof, and no blending a little of this, and then a little of that. Just mix the ingredients together all at once -dissolved yeast, powdered milk, oil, flour, and so on -knead the dough and away you go!
