Fantastic! Don't be fooled by other reviews that claim this is too spicy. It is a very balanced blend of spices you will truly enjoy. My wife is not a fan of spicy food. She loved this chicken. One caution though...make sure you have a great ventilation fan over the stove when heating the oil in the skillet. It can get smoky.

We loved this! My chicken came packaged as 3 breasts. So I doubled the spice mix, and it was perfect. I cooked in my pre-heated cast iron skillet (only pre-heated it about 5-7 minutes), used olive oil, and cooked about 5-9 minutes each side, depending on the size of the breast - they weren't all the same size. I did not cook them in the oven at all. They were delicious. My husband and son loved them, and I will be making them again. I served them over the Cajun Pasta Fresca recipe on this site.

I really enjoyed this recipe. Although, that amount of spices for 2 chicken breast is quite a lot. Next time I will cut the spices in half.

Followed the recipe exactly. Didn't care for the spice combination at all. This is not anything like any Cajun style blackened chicken I've ever had - and that's what I expect when I think of blackened chicken. The spices are all wrong. I am giving three stars - because the cooking method is great - and the chicken came out very moist. I took one reviewer's suggestion and let it 'sit' for 10 minutes - so we were able to scrape off the spices and enjoy plain juicy chicken.

This turned out pretty good. I didn't have any thyme on hand so I used crushed basil leaves instead. I had to make the spice mix twice because there wasn't enough the first time. Next time I will make a big batch of the spice mixture upfront. Overall it was worth making it. Thanks.

Yummy! My husband and I absolutely loved this recipe. Leftovers would be great on top of a salad. I blackened the chicken first for 1 minute on each side, but I baked it in the oven for 30 minutes; not 15-20 minutes. I'm going to do what one of the other reviewers did and make up enough for a batch of 30, since it doesn't go bad or need refrigeration. Thanks!

This chicken dish was very yummy! I added some garlic powder and cajun seasoning as well. I seared my chicken for about 2 minutes per side then put the chicken in the oven for about 30 minutes. (I took the chicken out of the oven after 10 minutes, but it was not done) The chicken was SO juicy and well seasoned. I served this with some cream cheese ranch potatoes (from this site). We will be having this again really soon!

Yummy and spicy. I took the advice of another reviewer and cut the chicken into bite size pieces and put the seasoning and chicken in a zip lock bag and shook it up.

Made a tasty somewhat crispy chicken. Had a good flavor but not spicy at ALL. Wouldn't suggest heating oil for 15 min. and please open your windows and doors when you make this! My smoke detector went off! Made this and put it on a salad. Was tasty but not spicy like I had hoped.

Delicious! I used chicken tenders, however, instead of the breast halves. I have a hard time finding breast halves and boneless skinless chicken breasts are little large for every night. I will definitely make this again!!!!

This was FANTASTIC! I doubled the spices and rubbed it on both sides, added a bit of chipolte chili powder. I had no problem with the kitchen getting smokey. I also baked mine for longer than the recipe called for. It was tender and juicy on the inside and crispy and deliciously flavored on the outside. My husband raved on and on about this. Thank you for the recipe!

This is the perfect way to use those chicken breasts that I buy and never actually figure out what to do with. I usually side them with steamed veggies for a healthy alternative.
