Marinated Black-Eyed Pea Salad

Diced red and yellow bell peppers, jalapeno chiles, onion, garlic, and parsley are tossed with black-eyed peas and crumbled bacon in a colorful salad seasoned with a tangy balsamic and red wine vinegar, cumin, and olive oil dressing.  

Black Bean, Corn, and Tomato Salad with Feta Cheese

This salad is dressed with a lime vinaigrette and has lots of crunch and flavor with a little jalapeno pepper pop. It's wonderful to make in summer with fresh ingredients from the garden or farmer's market. This is great for barbeques or potlucks.

This recipe is a favorite with my husband and five boys, all hearty eaters. It's filling, economical and, best of all, easy to prepare. I spend many afternoons driving our sons back and forth to their wrestling and band practices, piano lessons, Boy Scout meetings and church activities.
