2 (15 ounce) cans black-eyed peas, rinsed and drained
1 cup cherry tomatoes, halved
1/2 small red onion, cut into slivers
1/2 cup light Italian-style salad dressing
This was super quick, easy and inexpensive but that's about it. The semi-mushy canned B-EPs just didn't hold up with the firmer textures of the tomatoes and onion. Maybe it would work better with, say, garbanzo beans? Thanks anyway!
I add chopped avacado and instead of Italian dressing I use Catalina.
