"This is an easy, quick, and inexpensive salad to make. Two cans of black-eyed peas, cherry tomatoes, purple onion, and Italian dressing!" — sugarplease

2 (15 ounce) cans
black-eyed peas, rinsed and drained
cherry tomatoes, halved
red onion, cut into slivers
light Italian-style salad dressing
This was super quick, easy and inexpensive but that's about it. The semi-mushy canned B-EPs just didn't hold up with the firmer textures of the tomatoes and onion. Maybe it would work better with, say, garbanzo beans? Thanks anyway!
I add chopped avacado and instead of Italian dressing I use Catalina.
