1 large tomato, diced
2 tablespoons chopped red onion
1/2 cup chopped cilantro
1/2 teaspoon honey
1 teaspoon lime juice
1 tablespoon balsamic vinegar
Salt and pepper to taste
1 tablespoon bacon grease
1 clove garlic, minced
2 tablespoons minced red onion
1 (15.5 ounce) can black beans, drained and rinsed
2 tablespoons water

DIRECTIONS
Stir together the tomato, onion, cilantro, and honey. Season with lime juice, vinegar, salt and pepper; set aside.
Melt bacon grease in a saucepan over medium heat. Stir in garlic and onion, cook until softened and translucent, about 3 minutes. Pour in the black beans and water, season to taste with salt and pepper, then simmer for 10 minutes or until hot. Serve topped with pico de gallo.

This was great. To make it vegetarian, and cut down on the fat...sauté the onions in PAM and use liquid smoke to flavor instead of bacon grease.

Quite good. I didn't have any bacon in the house, so I sauted the onions in stock. The pico was really tasty and made the beans somethign different

I saw this recipe some time ago, but finally made it today when I saw that it was featured in allrecipes "The Daily Dish." Sure am glad I did! I'm not a big eater, but I could have eaten all of this...I think it would also make a great appetizer dip garnished with sour cream and served with tortilla chips.

Made with carne asada. We all loved it. Next night another of my sons came over and with the carne leftovers I made this again so he could try it. He loved it too. Peanut oil instead of grease.

We loved it! I used white balsamic vinegar, added a bit extra honey, as well as half a chopped serrano pepper (seeds removed). I used chicken broth instead of water just because I had some open in teh fridge. We loved the pico de gallo & had it on our fajitas as well as the black beans. Thansk for a tasty recipe SPEARL20!

This was SO good. I'm a vegetarian, so I didn't use any meat product, just olive oil. I didn't have much in the house in the way of fresh vegetables, so I didn't have the Pico de Gallo on top, but just the beans were delicious!

I was looking forward to this all day. Then, after I made the pico de gallo, I realized that we were out of black beans. I could have sworn that I just bought some!! So I ask my dad to pick some up on his way home, and he comes home with dry black beans. I guess he didn't understand that I meant canned...Anyways, the picco de gallo was delicious. We ended up just having it with brown rice. I can't wait to try it with black beans!

Excellent! I changed nothing. This one's a keeper! I served it with Zatarain's Mexican Rice on the side. The Pico de Gallo is great with that too. Thank you for a lovely addition to my recipe box.

The pico recipe is great! I made the pico only to put on carne asada tacos and got rave reviews. So easy to put together. The next time I made the beans and served them as a side dish - pico optional for those who didn't care for it. The beans were very good - bacon grease adds a wonderful flavor. I added more water than it called for because they tend to thicken as the heat - but I also mashed them a bit so it wouldn't be too watery. Will keep to make again - and the pico is definitely a keeper!
