Added a can of tomatoes w/ green chiles. It was great. Served it for dinner as a side dish to the Salsa Chicken on this website. Used the leftovers for lunch the next day to make a burrito filling. This recipe makes a large enough amount to do double duty.

This was so easy. I added some diced tomatoes and served with a little shredded Mexican blend cheese and touch of sour cream on top. It made a great meal!

yum! I added tomato paste while the rice and stuff was cooking. i also added a chipotle pepper chopped at the end. then i stuffed it into red bell peppers and roasted it. topped with a slice of chedder cheese during the last few minutes in the oven. good thank you.

This is a great base recipe - very easy to make. I like to top it with a little reduced fat cheddar and Rotel tomatoes. It is a great burrito/taco filling too.

This was a good recipe, very simple to make. I made this into a complete meal by adding diced tomatoes, cilantro, and pulled pork for BBQ (recipe on the site - did not add the BBQ sauce, just put the pork into the mix). This was tasty and quick!

Absolutely delicious. I made the recipe as directed, and I loved it. I used this as a burrito stuffer. If you double the recipe and put the rest in tupperware, you will have fast and easy meals all week!

Great recipe. I did add 2 fresh chopped tomatos and could have added 3 or 4 based on the amount. I used 2 cans of black beans which I rinsed off before adding. Overall a wonderful recipe - will make again.

Nice and easy, tastes good as well (if you like beans that is). It's probably better to use less beans (1 can worked fine for me). I also added some chic peas, not bad.

I loved this because it's so simple. You can add corn, green or red peppers, etc. You can use it as a burrito filling along with some cheese. One thing to note: it says 10 servings but that's if you're serving it as a side dish. As a main dish it serves only about two people.

When we sat down to eat this, both of us were expecting it to be healthy but not necessarily good and interesting to eat. Boy were we wrong! I added some fresh cilantro to the mix and the combination of cilantro and cumin was unbelievable. We used this mixture as a filling for corn tortillas and sprinkled a little bit of cheese on top. This will definitely become a staple recipe in our diets!

I really like this - so easy, healthy and tasty. I cut the recipe in half so I wouldn't have a ton of leftovers and it worked out well. I did have to add a little extra water/stock and extra time for my rice to finish cooking. But when it was done it was very good.
