This was a great side for Cinco de Mayo. I saw a few reviews saying it was too bland for their tastes, so I added red peppers to the onion mix, and frozen roasted corn, cilantro and lime juice at the end. It turned out great and I plan on making this again. A much healthier alternative to flavored rice from a box.

Love it, love it, love it. I plan to make this every week. It's delicious, a perfect meal, and a great base for other things. This is a true workhorse of a recipe. It's cheap and comes together fast. I would recommend heating everything up on medium, not medium high -- but all of you who aren't novice cooks, like I am, probably know how to do things. : )

This is meant to be a plainer dish and it is fantastic! I add tomatoes and low fat sour cream to mine. My husband likes the cilantro cream cheese recipe from this site with his rice. We also add about 3/4 can of corn, nice for texture. Very good!

This was fantastic! The only thing I did differently was to add a can of diced tomatoes w/ green chilis. This made great taco filling. Yummy!!!

I'm giving this recipe 4 stars because I did alter it to become a 5 star recipe. I used beef broth instead, as others suggested. I cooked the rice/onion/garlic/beef broth in my rice pot, and then added the beans, spices, and some salsa to the rice. It is delish! I too served it with salsa chicken from this site and I was in heaven at dinner time!

Good basic recipe. After reading other reviews, I also made some adjustments. I added a can of rotel, a can of mexicorn, and used some cajun seasonings and hot sauce. I also used instant brown rice to speed it up a bit. Tasted great!

I made some additions but left the bare bones of this recipe the same to make an exceptionally delicious dish!! After sauteeing the onion and rice with some cumin and chili powder I added the broth I also added a can of the spicy diced tomatoes and mild chilies. I cooked the rice as directed and when finished I added a can of rinsed, drained black beans and cooked veggie crumbles. The end result was so yummy it became my favorite dinner!!

This is a really great recipe. The cumin adds alot of flavor. To make it healthier I made it with brown rice. I added a can of southwestern style diced tomatoes and cilantro and then used this as a filling for burritos. I added sour cream and shredded cheddar cheese and my husband and I loved it. We try to eat 2 or 3 meals a week vegetarian and this will be added to our list.

Very good! I used beef stock that I made, which flavored it up a good deal. I agree with other posters that cilantro is a good addition, as well. I enjoyed the dish plain, and I also rolled some up in a tortilla shell with some cheese and sour cream! Yum!

Based on other reviews, I doubled the garlic and added a can of diced tomatoes with green chiles. I had to make this 2 nights in a row b/c my husband loved it so much. So easy and delicious!

This was a really easy, good recipe! I did some modifications however. I used beef stock instead of vegetable broth. I also added tomatoes, salsa verde, corn, black pepper, garlic powder, cayenne pepper and a bit of salt. I also browned some ground beef and spiced it with taco seasoning. I put the beef on the bottom of the bowl, then the bean mixture, and melted mozza/cheddar cheese on top and topped it off with sour cream! YUMMY!

I loved it! Makes a wonderful quick and easy side dish. I omitted half the oil and used a non-stick pan and spray to get the garlic and onions going. I also used chicken broth instead. Just make sure if you use powdered broth to taste it to make sure it's not too salty before adding. I also had to double the liquid amount to get the rice cooked.

We loved this! I added some cilantro and a can of Rotel. We made tacos with this and put sour cream on them. So very easy and delicious!
