Directions

  1. Whisk vinegar, sugar, and olive oil together in a bowl.
  2. Mix black beans, corn, feta cheese, and green onions together in a separate bowl. Drizzle dressing over black bean mixture; toss to coat. Refrigerate dip 1 hour before serving.

This tasted great. However, I thought this made too much dressing for the amount of the other ingredients. You could probably cut the amount of the dressing in half. Since I only had regular corn instead of Mexican corn, I added chopped red bell pepper and jalapeños to imitate the Mexican corn. The only thing is it is a very pretty dish. So I think the name does not apply. Proudly serve this dish for any occasion.

I made a batch to take to a BBQ party and everyone tried a bit of it but no one really cared for it. It definitely has a distinct taste; none of the flavors really seemed to work together. Thanks for a different idea but we won't have this again.

The ingredients sound like a weird combo but this was delicious! Also like someone else commented I used half the ingredients for the dressing part which was plenty. I also used Splenda to lower calories too.

Love this recipe. We eat it as a salad. I did half the olive oil and added salt, pepper, and a shake a garlic powder.

Easy and delicious. Used a yellow onion instead of green. Might try less sugar next time. Added diced tomatoes.

Ive made this 2 ways... 1. Using White vinegar & regular block cheese. 2. Using Apple cider vinegar. The 1st way with the white vinegar is MUCH better. The Feta falls apart & gets gross. Cube tiny pieces of block cheese and you will absolutely become addicted. Also, use frozen corn or better yet, fresh cooked corn cut off the cob.
