apple cider vinegar
1 (15 ounce) can
black beans, drained and rinsed
1 (11 ounce) can
Mexican-style corn, drained
1 (4 ounce) package
crumbled feta cheese
green onions, chopped
This tasted great. However, I thought this made too much dressing for the amount of the other ingredients. You could probably cut the amount of the dressing in half. Since I only had regular corn instead of Mexican corn, I added chopped red bell pepper and jalapeños to imitate the Mexican corn. The only thing is it is a very pretty dish. So I think the name does not apply. Proudly serve this dish for any occasion.
The ingredients sound like a weird combo but this was delicious! Also like someone else commented I used half the ingredients for the dressing part which was plenty. I also used Splenda to lower calories too.
Love this recipe. We eat it as a salad. I did half the olive oil and added salt, pepper, and a shake a garlic powder.
Everyone always ask for this recipe when I bring it to parties. Awesome dip!
I have made this recipe several times with a couple of changes. For this amount of dressing, I also mix in a can of kidney beans, I only use 1 TBL of sugar and I add in 1 TSP of salt to balance out the sugar. If I don't have chives, I use red onions and I like to add cilantro when I have it.
Didn't last long in our house. All enjoyed, even our 11 year old.
This is a great recipe! I did add a little bit of garlic powder and used reg. white corn. Very good!! Great as a salad or as a dip with fritos or scoops....very good.
