Good, with small changes: 1-yes, double the dressing. 2-I don't like the overpowering green onions, so I eliminate them. 3-I add crumbled feta cheese once it's cool. Yum!

This was perfect, especially for summer! I made the dish per the recipe but did add a tad more of the Olive Oil dressing. It's great for a potluck and one I'll make over and over.

Great, easy recipe! Plus, it's naturally pretty for presentation and appeal. My variations: One red, one yellow pepper. One can rinsed black and one can rinsed pinto beans. Whole wheat couscous (definitely still soaks up the delicious flavors). 1/2 - 1 teaspoon Chili Powder for a slight kick! Yumm.

A very healthy and great-tasting recipe that I'm looking forward to making again. It's the first time that I've had a couscous recipe that didn't taste dry. Would make a great picnic or BBQ dish for a crowd! (I'd at least double it for a crowd, though.)

My 13 year old vegetarian daughter makes this one. It's excellent every time. Everyone enjoys it. It's great for lunchbox food, tastes great when made, and out of the fridge the next day.

Love it! I just made this for a BBQ tomorrow and had to taste test. It is very tasty and very healthy! I am excited for my family to try. I kept everything the same and used Hodgson Mill's Whole Wheat Couscous with Milled Flaxseed & Soy.

This was a tasty, light dinner. I didn't have Couscous on hand so I used jasmine rice instead. I also added pinto beans in addition to the black beans. It was great.

Very good and healthy salad. I double the indgredients in the dressing like many others. Also I used 1/2 of a green pepper in place of the red since that is what I had and I think that was plenty of pepper for my tastes. I also cooked the couscous in vegetable broth so my vegan daughter would be able to eat it. Just finished and I am not sure what it will be liked after sitting but I am loving it now and I know the vegan will too!

This recipe was a wonderful springboard to a fantastic salad! I made some changes and additions and got rave reviews at a BBQ today! Here's what I changed/added: I used a whole 10 oz box of couscous and 2 cups of chicken broth. I doubled the dressing recipe (LOVE it!!!) I only used 1 can of black beans and a whole can of white corn. I also added 1/4 cup of golden raisins, 1/2 cup of dried cranberries and 1/4 cup of toasted slivered almonds. I think the dried fruit adds a welcome bit of sweetness. YUM yum! I just made it a second time tonight - to take to another potluck tomorrow! Thanks!

Tasted awesome. I used a can of black beans and a can of chick peas. I thought I could omit the cumin because I didn't have any on hand but I did end up getting some and it makes a WORLD of difference in taste!! I also added extra cilantro and some extra salt and pepper to taste. Will definitely make this again and again.
