This was excellent! I loved the combination of flavors. I did double the 'dressing' ingredients, but not the olive oil. Also, I left out the cilantro, because I don't care for it. I will definitely be making this again!

This is a terrific salad. It is so fresh. I made a few modifications for our taste: 4 tblsp olive oil; juice of one lime; 4 tsp of red wine vinegar; 1 tsp of cumin and 7 dashes of Mexican Hot Sauce.

Delicious! I added some toasted pine nuts for some nutty crunch and it worked for us. I agree that the dressing should be doubled because it is a bit dry as written.

i made a few substitutions so i could get by with what i had on hand, red onion for green, vegetable broth for chicken, lemon juice instead of lime, orange bell pepper for red. it turned out delicious, very addictive

Pretty good. I cut recipe in half as I was just serving my family. We will have leftovers. I used canned corn and dried cilantro as that was what I had on hand.

I think this salad is amazing. I changed it just a little. I used a whole red and yellow pepper, about 1/4 of a red onion, and about double the cilantro. Oh, I also used tri-color couscous. I could eat this salad every day. I especially love it, because I am doing weight watcers, and its like 6 points for the ENTIRE recipe. So yummy and healthy.

This recipe is amazing and so simple! I like to add a few ingredients like roasted red peppers, black olives, feta cheese and a little corriander. I recieve many compliments when I make this dish. We also throw some grilled chicken on top, marinated in mojo.

Delicious bean salad! Definitely double the dressing. I added all the veggies and both cans of beans--perfect! I used parsley instead of cilantro so either will come out fine.

This is the best salad to take to a BBQ and I can leave it at room temperature and not worry about it!! The only thing I changed was I didn't add quite as much olive oil. Other than that, it's delicious!

This was a hit at my fiance's birthday party. We have several vegetarians in our group and I made this dish for them in addition to veggie burgers and everyone ended up eating it at the party. The flavors are very balanced and the dressing (I made a double recipe of that) really gave the couscous flavor and texture. I hate dry couscous dishes and this was NOT one of them!

I just made this and it turned out GREAT! Per other's recommendations, I doubled the sauce except for the oil and it coated it very well. I put the salad into containers for the fridge, as it's for our picnic tonight - but rather than fill up all the bowls, I saved some to eat right now for lunch because it was surprisingly good! Thanks for the recipe!!
