I loved this. Even my 2 year old tolerated it. My husband who does not like couscous did not like it so it apparently does not always covert. He did say he loved all the flavors except the couscous texture (I used whole wheat couscous). I ran out of green onions before I made this so I used red onions. It was better the next day when the red onions had mellowed.

I have been making this salad for a while now as it is a perfect DIET food. Have a scoop with tuna for lunch, you'll feel full until dinner time. It's similiar to the middle eastern dish, tabouleh..but much easier to make. Even my husband pulls this out of the fridge and devours it...and it does store in the fridge for up to a week. Great recipe, I love it.

This was a great recipe, although I thought there would be more cous cous, so the next time I make this I'll reduce the beans and increase the cous cous.

Yummy! I only had one can of black beans and I thought it was the perfect ratio. This is a total "girl" salad. My husband thought it was "ok" and I think he called it "interesting" and my 4 yr. old said it was "weird" and only sort of ate it--even after I tried to say this is what Jasmine and Aladdin eat. However, I LOVED IT so I'm rating it on what I thought. Great for a lady's luncheon or make a bunch and eat it all week like I did. :-)

I made this today for lunch, all I have to say is it is a fresh taste of summer!!! It was a high of -1 today and this salad made all the differents. What a healthy light refreshing salad. Love it.

This was very good. The only ting was that the dressing wasn't that flavorful so I had to double the cumin. I also substituted quinoa and added three medium chopped tomatoes. If you want to find another great recipe that uses a lot of the same ingredients check out the lentil/black bean salad- it goes good on the weekly menu to use up the fresh cilantro and frozen corn in this recipe. Next time I will add a can of sliced black olives as suggested for a somewhat meatier taste. Definitely a keeper and one to play around with.

WOW! This is a fabulous recipe. Added only 1 can of beans and used fresh parsley as I didn't have cilantro. You won't be disappointed with this dish. Great for dinner parties.

This recipe is amazingly delicious. Even my 3 yr old and 5 yr old kids devour it. I double the dressing. Also you can substitute quinoa or millet for the couscous; although it changes the texture somewhat, the flavor is still excellent. Very forgiving recipe. I've substituted diced onions for the green onions and it is still just as good.

There's a local restaurant that sometimes has a similar salad on the menu that i love. I found this recipe and tried it and it's very similar. I increased the amount of lime juice because I like a little tang but otherwise, this is perfect as is.

This is just…wow. I made it three times in one week. It's not quite as quick as some have said, unless you're a really fast mixer and chopper, but it's still fast and easy to make. I'm sure the recipe is good as is, but I do do some things differently: Following the advice of others, I double the dressing except for the olive oil. Whole wheat couscous. Usually use green pepper as that's what I have around, used celery instead once. I enjoy cilantro but I have an allergic reaction to it, so I use it sparingly or use parsley instead. Two cups of corn instead of one, as that's the amount I have frozen my corn in. One can of black beans. Basically, it's very adaptable. Note: This is a very soft/comforting dish, and I imagine it would be even more so if you left out the crunchy peppers. As a vegetarian, I consider this a main dish thanks to the beans, and I can honestly say it's my absolute favorite Allrecipes main course find so far.
