Pretty easy to make. I used half the green onion - 8 just seemed like way too much. The couscous seemed a little gunky to me, which I think was due to a lack of liquid, which I will increase a bit next time. The end result didn't seem this way, so maybe adding the dressing helped this somewhat. A bit reminiscent of tabouleh. It was pretty good, but not "great." I also tried this stuffed into flour tortillas, which I liked and also made it more like a filling lunch.

This was outstanding. Low calorie, healthy and filling. I used grilled frozen corn from a local store (Trader Joe's). Variations to the base recipe: chopped jalapenos, sliced mango, slice avocado.

Very good. I substituted one can of kidney beans for one of the cans of black beans. I also added extra couscous and broth since I wanted to use the whole 10z box of couscous and 14 oz (2 cup) can of broth. I doubled the ingredients in the dressing. UPDATE: Made a 2nd time and substituted chopped steamed baby carrots for the red pepper. Otherwise, I did the same as I mentioned above. Very good again. Toddler and husband prefer the baby carrots. I like either way.

I love this recipe, and I make this often during the summer. However my sister and I recently decided this recipe is missing something, but we don't know what that is. We've done several variations of this recipe, doing everything from adding a generous splash of Italian dressing (which made the salad a little oily) to quadrupling the cilantro (which is actually very good, but doesn't fix the problem). We are still searching for the missing ingredient. If anyone has any ideas, let me know!

Awesome and healthy side dish! The recipe is perfect as written... just feel free to spice it up however you and your family likes it. We added in some addition veggies and feta cheese, which made it even better!

This was WONDERFUL! i am not a black bean person so I omitted those. I also added 1/2 t. lemon pepper and 2 T. lemon juice. Very good flavor - loved it!

An excellent healthy and easy to make recipe! Have made it several times now for family and to donate as a dish for local events. I double the dressing (because it's so tasty) and use half the beans (when I only have 1 can on hand). A great side dish with any meal -

Had this during a Daniel Fast... used Veg. Stock for Chicken and it still tasted awesome. I love this recipe both ways, so flavorful and I find it really fresh and light. Can't get enough of it!

It's just as tasty as it is pretty! Eight green onions would have been far too much for me, so I only used half that, and it seemed just right. I look forward to making this again and again!

Our family loves this recipe. I make a little more sauce than it calls for and put fresh tomatos on top with a little grated parmesan cheese. It's wonderful! I make it over and over again.

Made as written except half the onions & one can of black beans. I enjoyed this salad a lot. However, I keep forgetting that I'm the only one in the family that likes couscous - so no one else would eat it (husband & kids 15,14,& 12) and they like most everything!

Rock on! This is awesome stuff. I made it with the chili lime chicken kabob recipe and it was spectacular - although, it would really be great on its own. I cook low sodium so I omitted the salt and used low sodium chicken broth. My husabnd did end up needing to salt it a bit, but loved it anyway. Thanks for the great recipe!
