Loved this recipe as a cold salad(including recommended changes like added cilantro and no celery). Tonight, though, all I had was frozen corn so I heated the olive oil, added the garlic and some red onion, tossed in the corn, cumin etc. and stirred in the beans. I served it warm (without cheese) with hot cheese quesadillas. It was a hit!

Rarely do I make a recipe and not "tweek" it a little to fit my taste. But this in amazing as is. It's great as a salad or as a salsa. I sometimes will add some diced jalapeno and I also like to change up what kind of cheese I add (mozzerlla, co-jack, pepper-jack) Wonderful!

The only change I made was I added a 15.75 ounce can of yellow corn. This is pretty good, nice texture, with the crisp celery and the soft cheese. The tang of the lemon juice along with the heat of the salsa was refreshing. I am not fond of cilantro, and left it out. I will make this again.

I make this salad the night before and let it sit overnight in the refrigerator so that everything can "mix" together. I then pack it in individual 1 cup containers for use at picnics in the park or to bring to work for a healthy snack. Good way to eat black beans (healthy) with a little bit of a kick with the cumin spice. The only thing I did differently was I bought black beans in a can that were "southwestern" and already mixed with cumin spice. I did not rinse my black beans off but you may want to because the cheese chunks get a bit "slimy", doesn't bother me but might bother others especially those folks (I have a few in my family) who freak out if they have to eat anything healthly like "black beans". Overall a very simple, easy to create and very healthy dish. I used lower fat/skim mozarella cheese to keep it on the healthy side.

The Best!!! I used fresh corn cut off the cob and warmed it in a little margarine (4 ears & 2 tsp. margarine, then prepared as directed. Everyone loved it and I'll double the recipe next time.

This is good, ingredients all work well together. For me it was like eating salsa with a fork though, not so "salad" like.

A big hit! The guys in the house were scrapping the bowl in record time! The only alteration I made was adding some fresh chopped cilantro. They aren't big "bean salad" fans, so I told them it was dip and served it with chips. Fantastic - I'll be making this again soon, but will have to double the recipe.

This recipe was a hit at my family reunion! Nothing was left but the cleaned out bowl. I doubled the recipe and added some fresh/chopped cilantro, some canned/diced tomato with jalapenos, and some cubed pepper jack cheese. I left out the celery. It had a little kick to it, but it was perfect! I left a bowl of scoops next to it, in case anyone wanted it as a salsa instead of a salad.

I prepared this recipe exactly and was not impressed at all. I ended up adding all kinds of extras like green chilis, chili powder, and crushed red pepper just to get some flavor. It was not a very pretty dish either once you add the picante sauce. I will keep searching fora better recipe.

My first bean salad. I couldn't be happier, well actually I could, I'd leave out the celery and maybe go for shredded cheese instead of chopped up cubes. But that's just personal opinion/preference. Delicious none the less! Can't wait to share it with friends.

Thank you SO much! Wow! What a delicious suprise! I'm never been fond of any sort of "bean salad", but I've now changed my mind! This one was very easy to prepare and every single person at our large 4th of July family gathering thought it was delicious, including me! I followed the directions exactly, BUT doubled the recipe and I did add appx. 1/4 cup of chopped Cliantro. We ate it both plain and with Corn chips. It was a HUGE hit!

This one is a winner. Only thing I did differently was to use a shredded cheese blend rather than cubed cheese. I love the blend of flavors and textures, and I love that you can use it as a salad or as a dip with tortilla chips. Will definitely make this again and again! Thank you!

This was a great side dish for a bbq. We used pepper jack cheese. I agree with the others that fresh cilantro would be an excellent addition.
