Yum! These were so good. I did brown some diced chicken in with the onions because my family thinks they need meat with every meal, and I used the corn cut from 2 fresh ears instead of canned. I also added a little less than 1/4 tsp. of ground cumin for more of a smoky taste. The little bit of brown sugar gives these just a hint of sweetness, but it goes so well with the other indredients.

I followed the recipe and did what several others did in folding the tortillas in half and baking them. I just don't get it. I didn't find these very flavorful and they fell apart.

I made these exactly as directed, including adding the brown sugar and cooking them in a pan and I thought they were excellent! I wouldn't change a thing. The pan frying really melted the cheese evenly and gave a yummy buttery consistency to the tortilla, also turning it golden brown. They were even better the next day, reheated in the toaster oven. Yum! We will add this to our vegetarian rotation.

Seriously, the best quesadillas ever! To the person who said not enough spice, get a better salsa! I actually had everything on hand for a salsa (homeade) and garden tomatoes so I made my own. These are to die for awesome! Will make them for dinner and serve with mexican rice. Thanks for sharing!

I made two batches. One with chicken left over from the grill and one without. They were both great and my kids loved it. (one is vegetarian, one isn't) This is definitely a keeper!

WOW! This was my first attemptat quesadillas, and it was fabulous! I added diced cooked chicken that had been marinated in a chipotle marinade. That made it spicy enough that I didn't feel it needed the red pepper flakes. For salsa, I used fresh salsa because that's what I happened to have on hand. Ohhhh, it was so yummy!! And colorful, too. I sense a new family fav coming on :~)

Very tasty! I used wheat tortilla's and I cooked them on our grill instead of pan frying. Even my kids loved them (I also omitted the hot pepper because of the kids, but still yummie!) Great way to get some veggies and beans into them!

This recipe as is didnt have enough flavor for me so i added some cumin, garlic and a little salt. Also cut the brown sugar way down. I suggest you add a little, taste a little until its to the sweetness you like. Four stars because it really needed the extra spice for my family.

YUM! YUM! YUM! I just made these, and they are so good. I didn't have any salsa, so I substituted BBQ sauce, and it is delicious! I also used my homemade tortillas, which also make any quesadilla so much better! Thanks for a great recipe.

Loved these! I am not a vegeterian but am trying to not eat meat one day a week. I added chopped jalapenos and a little lime juice and left out the red pepper flakes. I also just used cooking spray instead of the oil. I took the suggestion of baking in the oven for 10 min at 350 and then broiling at the end and that worked well if making multiple quesadillas at one time. Stove top works fine if you are just making one.
