I just loved this recipe! I used a bit more crushed pepper flakes because we like things a bit spicy. The only complaint I have was it was so difficult to flip it neatly in the pan. Next time I may use one tortilla and fold in half that way I only have to worry about one open end. I will definitely make again and will try with chicken as other suggested.

Excellent recipe! I made it close to as written, but added chopped fresh tomato instead of salsa to the mixture and used green onions because I like them better. I had much more filling than could fill 8 tortillas.

Great recipe! I will make this again and again. I have actually already sent it to several friends. Like suggested i folded ours in half and fried two at a time in my 12" cast iron skillet. I added one cup of frozen corn instead of canned and it was nice and crisp. Came out amazing. My husband did request the addition of chicken as he is a big meat eater. When i used the leftovers for lunch i actually just added some ham in his and he said it was excellent.

These are pretty good. I think next time I will add some shredded chicken. These are more of a quick snack for my kiddos before we head out for football, soccer, bball, ballet, tap.... you get the point. Great go to meal.

They were very good for the first couple of bites and then my husband and I couldn't stand to eat any more. I'm not sure what it was. They were close to being good, something just didn't taste right. They were easy to make, and have potential. Just not for us.

When I decided to make these I was not expecting anything special, just a quick and easy meal. After making these I can attest to the fact that they were quick and easy, but oh my goodness the taste exceed my expectations. These were so yummy and flavorful. I made them again a few days later.

These were a wonderful healthy meal. I followed the recipe, just choosing ingredients to make it lite. I used spray butter to spray my skillet instead of regular, and I used high fiber tortillas. The sugar is minimal for the amount of beans and corn there is, but you could even cut that out if you wanted. I will be making these TONS for lunches and quick dinners!

These were great! Followed the recipe exactly. Next time I'll play around with ingredients, like adding tomatoes. They were a bit messy to make and eat, but still great!

Loved it...wouldn't change a thing! The mix of textures and flavors was perfect. The brown sugar made it a little sweet, the salsa and red pepper flakes a little spicy, the cheese did not overpower the other flavors. I will definitely be making this one again.

These were fantastic! The only thing I did different than the recipe is put in 1/2 cup of Salsa instead of 1/4 cup. I started out with 1/4, but it got lost in the beans and corn. It had the right flavor for me by doubling it. I loved the brown sugar in it, and the tortillas cooked in butter topped it off perfectly.

So easy and delicious! I used canned seasoned chopped tomatoes - b/c i was all out of salsa. I omitted the brown sugar and used 2 tsp of cumin instead. I baked it in the oven for 10 minutes and broiled it - with a close eye. I served it with Mexican Rice II - Soooo good!

Really good! I have made these twice now and the first time I thought it was too sweet, so I added some green salsa verde the second time and it was perfect! Dipping in sour cream is a must!

This was my first time making any sort of quesadillas, so I was very impressed with the way they turned out - delicious. The only problem that I had was that, for turning as well as eating purposes, the two tortillas didn't seem to stick together. I would recommend using a lot more cheese than the recipe calls for. Once the tortilla is on the griddle, I'd put a layer of cheese, bean/corn mixture, another layer of cheese, top with tortilla.
