these were pretty good. i was looking for a recipe to use up some black beans i made in my slow cooker and homemade salsa. i left out the brown sugar and used frozen corn because i dont like canned corn. i did add a bit of shredded chicken in hubby's. i served this w/ saffron rice and they tasted great together

Pretty good recipe! I did not have some of the spices needed so my quesadilla lacked in the flavor department a little bit. Next time i'll use the spices and add ground beef! Thanks!

These take a little more time than your average quesadilla, but they are sooo much better. I didn't know quesadillas could taste so good!

I have made these a few times with rave reviews. The only difference is I sauteed a whole onion and red bell pepper together, added the black beans, corn and seasoned with a package of taco seasoning. Served the quesadillas with sour cream and gucamole. A great recipe for football season!

This is a definite 5 star for me. It has a little heat from the red pepper flakes, a touch of sweetness from the brown sugar, a light crispiness from the pan-toasted tortillas and a rich creaminess inside from the melted cheese. It's just a perfect balance all around. I prepared this almost exactly as directed except I skipped the butter and just sprayed a non-stick skillet with butter-flavored cooking spray. Also, I added a little diced green and red pepper along with the onion. I topped with extra salsa but wished I had sour cream on hand too, so I'll get some for next time. By the way, the ingredients and directions as stated would make 4 whole quesadillas, so the serving size assumes that half a quesadilla is a serving. I ate a whole one and doubt I would ever want less. It's too good!

These were good but not spectacular. I modified it though. I put hamburger in it because my husband will not eat dinner w/o meat. I didn't have red pepper flakes or onion, but I did add green onion. My husband said they were delicious.

Yummy! This received 2 thumbs up from my whole family. I added double the beans and corn, lime juice, cumin, and chile powder. Baked and then broiled to crisp. DH complained that I didn't make enough! Might add chicken the next time, but it really is great the way it is! Thanks!

These were so simple & I took the advice of another review & cooked them in tortillas in the oven. I sprayed the tops with Pam & broiled the tops after they were done cooking to make it crispy. THen I used a pizza cutter to cut slices. It was a bit messy but very tasty!

Great recipe! Because of what I had on hand, I used a combination of mozzarella and cheddar cheese instead of monterey jack and I didn't add the red pepper. They were still delicious. I also baked them in the oven as another reviewer suggested. Yum-Yum. I will certainly make them again! Thanks so much!

This was such a yummy, quick recipe! My husband and I have such busy days and sometimes nights, that it's nice to be able to make a filling, healthy meal that can be made quickly! The only problem I had was that I couldn't eat it all! :D

This was a solidly good recipe and I was pleasently surprised by how well the brown sugar worked with the salsa and the rest of the ingredients. Next time i think i'll try it with barbecue sauce; definitely a keeper.

I just loved this recipe! I used a bit more crushed pepper flakes because we like things a bit spicy. The only complaint I have was it was so difficult to flip it neatly in the pan. Next time I may use one tortilla and fold in half that way I only have to worry about one open end. I will definitely make again and will try with chicken as other suggested.
