I have to admit I was a little hestitant when I read the ingredients of this recipes. I made it exactly as the recipe reads. I did make it ahead of time and put it in the fridge until I needed it. So easy for a vegetarian meal topped with salsa and sour cream. Definitely a keeper - Thanks!

I liked this better than my traditional chicken quesadillas. I didn't even miss the meat. I added frozen corn from a bag and I cut back slightly on the amount called for in the recipe. I also added a bit of southwestern seasoning. Yum!

very yummy. SUGGESTION: i folded the totilla in half so i can make 2 at time. I also added some refried beans to the tortilla. The whole family loved this

Love these! A great quick dinner especially for nights when hubby is on the road and I don't feel like cooking a big meal for just me and the kids. All three kids, ages 18 months to 6 1/2 years, love these!

I never really had black beans before but this was really good. My boyfriend loved these we added shredded chicken to them...used salsa with a little bite to it to add extra flavor. Had guacomole with it didn't have any sour cream but both would be good.

I love this recipe..since I discovered it, we eat these at least once a week. The only change I make to the recipe is that I blister up the tortillas one at a time on the stove before I make the filling. Then I place the tortillas on a cookie sheet, top with cheese, filling, more cheese, and another tortilla and bake at 400 for 8 minutes until the cheese melts. This way, the tortillas are crispy and the inside is gooey and delicious! The filling keeps great in the fridge for a few days-we always eat the leftovers.

We cooked this tonight and it was great!! We loved it. The only reason I didn't give it 5 stars is because I think it would be better with some meat in it like chicken, but they were still great!

I've made these a few times now, and love them. Not spicy enough for me though.I add some green HOT salsa to liven it up a bit, and diced jalapenos. I tried canned corn, but fresh corn is much better. I even tried some chicken/jalapeno sausage diced up, browned and thrown in. The filling holds up well in the fridge and can be used for a couple days of leftovers that are just as good as the original meal.

I did not like this recipe at all. I made no changes to the recipe, but I did mash the beans. I think it would be much better without the sugar. I don't think I'll try it again.

This was very good! Left out the pepper flakes for the kids' benefit and served it with guacamole and sour cream. Also, used flavored flour tortillas. Very yummy. I'm sure it will become a favorite around here.
