I liked this one...different though. I used frozen corn instead of canned, totally omitted the butter and doubled the amount of salsa in the mix. The brown sugar added a very slight sweetness while the hot pepper flakes balanced it out with a lil heat. Served with low fat sour cream and extra salsa. Will make again. Thanks!

Very nice...great flavor and easy to make (my primary criteria). I think it worked better for me when the butter was gone from the skillet, though. The first one seemed a bit soggy.

My husband - who never cooks and is a picky eater found this recipe and...WOW!!This was wonderful. We did omit the brown sugar and red pepper flakes and instead added cumin, cilantro and chipotle chili powder. We also added in slices of cooked chicken breast. Such a great starter recipe that is easy to "mix and match" with other flavors. Even the kids loved this. Will be making this often!!!

Fantastic! My husband thinks everything has to have meat in it, but I wanted a meatless recipe. He actually loved it, it had a great mix of flavors and we will definitely repeat.

My family really liked these. I used more onions and more salsa (probably twice as much). I folded the tortillas as recommended in an earlier review. We served them with low-fat sour cream and additional salsa. Will definitely make again.

Made recipe exactly except added chicken as well. Was really good, but seemed like it needed something. I think adding tomatoes in addition to the salsa would be a good choice. Served it with salsa and sour cream . Was a healthy dinner for us.

These were great. Especially with a little hot sauce/sour cream on the side. I give it 4 stars because I think it could use a little bit more flavor...maybe some more seasonings, I dunno. But still good and I'll make them again.

My husband and I loved this easy to make dinner with a couple of minor variations. I used low fat Mexican blend cheese to cut calories. Instead of oil and butter, I sprayed the pan with Pam before mixing in the black beans and corn and onions. I also baked the tortillas in the oven for 5 minutes instead of frying to cut back on the fat. Sprayed a baking sheet with Pam and brushed a little olive oil on top of each tortilla before baking, which made them crisp. Served with guacamole and fat free sour cream. Delicious!

This was delicious! Will make again. I did not put the red pepper flakes in because I have a little guy and did not want to make it too spicy for him. I added a little more cheese in my husbands. He loved it and said he would eat it again. I was a little surprised because he is a carnivore and I did not add any meat. Thanks for sharing the recipe.

I love, love, love this recipe. It's cheap, healthy and filling. I also bake mine at about 350 for 10 minutes like a number of other reviewers suggested. The filling is also great served over rice.

My bf and I loved this recipe!! It has actually taken the place of a different quesadilla recipe that I nomally make. I just didn't add the onion b/c I don't eat them and I didn't use any brown sugar. Everything still came out great!

Made this last night and it was a huge hit! Even my 2 toddler boys gobbled them up. Only changes i made was to leave out the pepper flakes (for the boys) added a little cumin and a pack of precooked chicken breast chunks. I also cooked them all in the oven with pam as one reviewer suggested so that they would all come out at the same time and just flipped them halfway through. i will definately make again!
