Wonderful! We eat this at least once a week, usually twice. Easy to make and so tasty! Only change I make is using pepper-jack cheese.

This is very filling and tasty! I didn't use the red pepper flakes. The quesadillas with the filling are a little hard to flip over so it can be messy-- but that is OK. We cut up some avocados to serve with the quesadillas as well.

One of our favorites!! My boyfriend tells me he prefers my quesadillas to any restaurant and requests them often. We usually both say "Mmmm" when we eat.

Much milder than I had expected. I followed the recipe as written, adding the brown sugar, medium salsa, and the red pepper flakes, but it was still mild, with more of a sweet than spicy taste - probably because of the supersweet corn. It still tasted good, just needed some extra heat.

I omitted the brown sugar and added a bit of cumin instead, since I'd rather not add sugar to anything other than dessert. I also baked them at 350F for 10 minutes and then broiled them for 5 minutes, as suggested by other reviewers. A nice, hearty twist on an old favorite. The toppings completed the meal nicely.

YUM!! Everyone in my house gobbled these up! The only thing I changed was I omitted the onions. I've been trying to find good vegetarian meals, as we eat them twice a week. Thank you for posting - I will definitely be making these again!

These were great! I folded them over to make them easier to flip, but they still turned out wonderfully. Just spicy enough, and great with sour cream and salsa!

This was ok, but too sweet. If you like sweet quesadillas you may like this one. I suppose if I try this again I will try it without the brown sugar.

These came out ok. I love sweet and spicy so I was hoping for something out of this world but got "good" instead. I think the problem is that I usually make my quesadillas with chicken, carmelized onions, green onions, black olives, lots of cheese and some refried beans for glue. So - compared to what we're used to the flavor intensity was under par. For ease and cost though, this makes a good, quick lunch.

This will become a dinnertime staple. Super great, healthy meal. I just started using dried beans recently and after following the quick soak recommendation on the bag, I threw them into a crockpot, covered them with water, added a bay leaf and some salt and pepper. 3 hours on high later, I had really, really yummy black beans that were better than any canned I have ever had. They were great in this recipe~

What a quick and tasty meal ! Although my hubbie is a "meat eater", he enjoyed this very much. I too, added just a touch of brown sugar, as well as some Cumin to taste. I will definitely make this again. Even though this is a vegetarian dish next time I think I will added some shredded chicken ( to make the hubbie happy). :)

I liked this one...different though. I used frozen corn instead of canned, totally omitted the butter and doubled the amount of salsa in the mix. The brown sugar added a very slight sweetness while the hot pepper flakes balanced it out with a lil heat. Served with low fat sour cream and extra salsa. Will make again. Thanks!

Very nice...great flavor and easy to make (my primary criteria). I think it worked better for me when the butter was gone from the skillet, though. The first one seemed a bit soggy.

My husband - who never cooks and is a picky eater found this recipe and...WOW!!This was wonderful. We did omit the brown sugar and red pepper flakes and instead added cumin, cilantro and chipotle chili powder. We also added in slices of cooked chicken breast. Such a great starter recipe that is easy to "mix and match" with other flavors. Even the kids loved this. Will be making this often!!!

Fantastic! My husband thinks everything has to have meat in it, but I wanted a meatless recipe. He actually loved it, it had a great mix of flavors and we will definitely repeat.
