Wow! These really hit the spot! I followed the recipe exactly, except added 1/2 c salsa instead of 1/4 c. They were soooo good. I made them in my quesadilla maker! I'm excited to have extra filling so I can make them again this week! It was the perfect lunch! I might double the recipe next time and freeze in single servings so they're easy to heat up and make on short notice. Thanks for the recipe! Will make again and again!

This is really good! I made the recipe almost exactly, the only change was that I added about 1/2 of ground beef seasoned with taco seasoning. I have trouble cooking things on the stove so I assembled the quesadillas, with the outside of the tortillas buttered, and broiled them in the oven for about 5 minutes each side. This is a very easy recipe!

This was so amazing! I just got done making and eating this great recipe. I didn't add the onion as I'm not a fan and I used mexi-corn. Didn't use any butter to heat the tortillas either. I've never had black beans before so was skeptical, but it was wonderful! And I'm stuffed. LOL Thank you!!!

This is FANTASTIC! The only change I made was I used about a cup of salsa. I served it with homemade guacamole and everyone raved. I will make this on a regular basis!

Great!! I made my own bean in the crockpot. I cup black beans w/1 tsp salt, cover with water on high for 4 hours. Also added a bit of cumin for a Mexican flare. They were delish!! My teenage girls & husband all loved them. Definately will make again. Goes great with homemade tomatoe soup!

Heaven on a plate! This was an absolutely delicious treat. Took the advice of many of the other reviewers, and added a bit of taco seasoning to the mix. Also baked the quesos instead of frying - didn't need cooking spray or oil as the tortillas crisped up nicely on their own. Instead of folding, I sliced each 10" tortilla in half, piled filling on one side and simply topped with other half of tortilla. Served with fresh avocado salad, sour cream, cilantro and shredded lettuce. Delish!

I used homemade beans, raw red onions, and some leftover (corn off the cob) cream corn like no other instead of the corn and sugar. Added cilantro and kept salsa on the side with some sour cream. Also served leftover beef fajita quesadillas with the leftover peppers and onions. Kiddo liked the black bean and corn better.

Couldn't believe I got my husband to eat a meal not including meat, but he survived! Used less brown sugar ~2tsp. and added 1/2tsp. cumin for a nice taste. I folded the tortillas over for easier flipping. You can also bake at 350 for 10 minutes, broiling for a minute to brown the tops at the end--especially useful if you need to feed a bunch of people at one time.

These are really yummy and easy. I didn't use the brown sugar or red pepper flakes. I used taco cheese, mexi corn and mixed in a little taco seasoning with the onion, black bean, and corn mixture.

I love this recipe, it's a little different every time I make it, but always is yummy! I make it every week or so, and any leftovers are saved to serve over corn chips and salsa. It's even better the next day. My picky meat-loving partner even liked it! I have had success with stovetop or oven made quesadillas, just be sure to turn the oven to at least 400*F.

Very good! I didn't have salsa but it was still very good. Followed recipe exactly (besides salsa). Ate mine with sour cream. Will make again, hopefully with salsa next time!

Good recipe for sure! I opted for the folded versions, and did them in the oven so I didn't have to wait for more :) A little bland for my tastes, but that's easily adjusted with some hot sauce and sour cream. I'm thinking next time I'll go with some others and throw in a jalepeno or habenero to give it some kick! Definite keeper though!

Awesome!! I didn't add the pepper flakes because of the kids & I used peach salsa which I would highly recommend. For some of them I used leftover spicy shredded beef. They were pretty messy but delicious.
