This was a big hit with my wife and me. I veganized mine by using margarine in place of butter and using Follow Your Heart Vegan Monterey Jack. I forgot the red pepper flakes but they were tasty none-the-less. Thanks so much for this great recipe; I'm sure it will become a regular for us.

This was SO yummy. Messy but yummy. Only thing I omitted was the red pepper flake. I knew the jarred salsa I had on hand would be hot enough without adding the flake. This scaled down well for me, making two small-ish quesadillas. Very filling.

YUMM!!! This is a great dish! I omitted the brown sugar and instead used sweet corn; and used Pam spray instead of butter. Cooked in the oven (with flipping once) as another reviewer suggested, so I could serve all at once for a dinner party. I made this a meal with a green salad with El Torito brand Mexican Ceasar dressing with home made tortilla strips on top (just cut up a corn tortilla and fry in a little oil). Also served with no-fat sour cream, avacado and homemade salsa (tomatoes, jalepenio, cilantro, onion, & lime juice. Great healthy meal, will definetly make it again.

I thought this was really yummy. I read the reviews and left the brown sugar in the recipe, maybe used a tad less than 1 Tbs. I thought it added a nice touch. I added cumin. Instead of using salsa, I used fresh chopped tomatoes that I put on top of the warm mixture in the quesadillas along with some chopped green onions. I will definately be making this again. Its a great meatless dish, but I may try it with chicken some time down the road.

I made this for my son's 3rd grade class. They loved it. The only ingredient I would omit is the sugar. It was a little too sweet.

**Update** I'm adding a star and changing my review because I needed dinner in a pinch the other night and I was able to whip this up. You know what? It was pretty tastey for a meal on the fly. I thought this was good, but I thought it was more of a lunch type recipe than dinner. I'm not sure I would make again.

The taste of these quesadillas was excellent, much better than our normal quesadillas. I used frozen Southwestern Corn and added chicken for a heartier meal. My only complaint was that we had to knife and fork it, because it was so messy. Of course I'll be making this again, though. Next time I might use the filling for a Mexican Lasagna, which would be good too.

Made these for dinner tonight and they were great! I didnt use the sugar or red pepper. I think theyd be a little too sweet with the sugar. Very tasty, had them with some guacamole. Yum!

I thought this was good! I'm starting to do one meal per week as a meatless meal, and this was our first one. I thought it was really good, my husband wasn't really a fan, but he is also apalled by the idea of not having meat at a meal so I'm taking his negativity towards this with a grain of salt. I followed the recipe to a "t" and I thought it was great! I made one into a quesadilla and the other into a roll up tortilla and I thought both were great! Will definetely make again!

This was a good basic recipe. I didn't have the salsa on hand but it tasted great anyways. I added some cumin and thyme for taste to the beans and corn. I dipped it into sour cream. I will make different variations of this recipe again.

Very easy recipe and very tastey. I did NOT add the brown sugar .... And am glad that I did NOT. The corn adds its own sweetness for the dish. I would make this again. No need to worry about flipping the whole tortillas .... easy as 1 2 3!

These were so amazing, I followed the recipe exactly except for slightly reducing the amount of brown sugar. I saved the leftover filling and made quesadillas for the next two days!
