These were delicious. I thought I knew what they were going to taste like before I ate them because I've eaten a lot of dishes with black beans and corn. I guess it's the brown sugar that chaged the flavor. At any rate these are everything you want in a recipe...quick, easy and yummy.

We love Mexican food. This is now a new family favorite. I could not make the fast enough. The only changes I made was adding our favorite hot sauce, using cheddar (because that is what I had) and I cooked them in a pan with non-stick cooking spray.

Yum, these were very good. Hubby just deployed, yet again, so I need recipes that I can assemble quickly. This fit the bill, and my not quite 2 year old ate it. My corn was super sweet, so I omitted the sugar, I also omitted the pepper flakes since the baby was eating it. I sprayed it with vegetable spray and baked it in a 350 oven for about 15 minutes. Served it with Spanish rice, salsa and sour cream, can't wait to have it again.

My husband and I enjoyed these quesadillas. I reduced the brown sugar slightly and shredded a chicken breast which I added in with the black beans. I put them in the oven at 350 for 10 minutes instead of using the skillet.

Easy and delicious! I added some green pepper and did a layer of cheese on both ides of the bean mix but otherwise followed the recipe. The best part is you can put the filling in the fridge and heat it up to make a fresh quesadilla later.

WOW--Thanks so much for this recipe. My 2 yr old loved it for lunch. As recommended I doubled the recipe and doubled the salsa. When we were done with lunch we made burritos and froze them for my husbands lunches. Very convenient recipe....

Very good. I doubled the salsa and used frozen corn (thawed) instead of canned. I also baked them at 350 for 10 minutes then broiled them for a couple of minutes. Much easier then doing them on the stovetop.

I love this quesadilla recipe! I reduced the pepper slightly but otherwise followed the recipe exactly. It was great with whole wheat tortillas. Even my 3-year-old enjoyed it. I had some of the leftover filling with brown rice with cheese on top.

Wow! These really hit the spot! I followed the recipe exactly, except added 1/2 c salsa instead of 1/4 c. They were soooo good. I made them in my quesadilla maker! I'm excited to have extra filling so I can make them again this week! It was the perfect lunch! I might double the recipe next time and freeze in single servings so they're easy to heat up and make on short notice. Thanks for the recipe! Will make again and again!

This is really good! I made the recipe almost exactly, the only change was that I added about 1/2 of ground beef seasoned with taco seasoning. I have trouble cooking things on the stove so I assembled the quesadillas, with the outside of the tortillas buttered, and broiled them in the oven for about 5 minutes each side. This is a very easy recipe!

This was so amazing! I just got done making and eating this great recipe. I didn't add the onion as I'm not a fan and I used mexi-corn. Didn't use any butter to heat the tortillas either. I've never had black beans before so was skeptical, but it was wonderful! And I'm stuffed. LOL Thank you!!!

This is FANTASTIC! The only change I made was I used about a cup of salsa. I served it with homemade guacamole and everyone raved. I will make this on a regular basis!

Great!! I made my own bean in the crockpot. I cup black beans w/1 tsp salt, cover with water on high for 4 hours. Also added a bit of cumin for a Mexican flare. They were delish!! My teenage girls & husband all loved them. Definately will make again. Goes great with homemade tomatoe soup!
