great soup. i too added fresh cilantro and i thought it was flavorful, hearty and would be good over rice (followed recipe exactly otherwise). you can even add ground turkey or meat if you'd like. i pureed it more as i like a thick soup but everyone loved it. thanks.

Very delicious and easy! I made a few alterations to make it healthier and more to my tastes (I like spicy). I used dry beans and frozen corn to cut down on the sodium. I also added 2 jalapeno peppers and and extra tablespoon of chili powder. Even my meat obsessed roommate loved it!

This is a good place to start for a yummy black bean and vegetable soup but it is really bland as written ( and this is coming from someone who was sick the day before eating it). I would add a lot more chili powder, cumin, and some red pepper for starters.

Very good, easy, inexpensive; I used low sodium chicken broth for added flavor, but otherwise followed the recipe. I feel that it's missing something, but as I don't have a lot of experience with this style of cooking, I can't identify what it needs. Right amount of spices, I added salt. I would make this again, but probably add cilantro as others have, and reduce the amount of broth.

This soup was delicious - I was SO sorry when it was gone. It is very easy to modify according to the ingredients you have on hand. Garnish with a bit of grated cheese and you have a filling and yummy dish for a cold winter's night.

Great taste and texture. We used dry beans that we cooked rather than canned beans. We also divided the soup and kept it in the freezer for quick meals. Freezing worked wonderfully.

This is delicious. I added a bit of chopped green pepper along with the other veggies. It is pretty spicy with 2 tsp of chili powder. I think 1 tsp is just right for me. Yummy soup!

This recipe is definitely a keeper! Very flavorful, but not too spicy. I also followed a few of the recommendations: added 3 cans of black beans instead of 2; 1 can of DelMonte diced tomatoes with zesty mild green chillies instead of stewed tomatoes and decreased the vegetable stock to 3 cups. I also added cilantro; extra chilli powder and 2 garlic cloves. Thanks for sharing this recipe!

Splendid! I substituted the stewed tomatoes with 6 oz tomato paste and 1 c water or so. It tasted terrific! Can't wait to eat the leftovers.

This soup is absolutely delicious the way it is. I too like a thicker soup so add only 2 cups, I use water instead of stock and there is no flavor lacking! Since I usually have all the ingredients in my pantry its my ace in the hole if I need a meal in a pinch. Serve with quesadillas-super yummy. Thanks for sharing.

This was delish! The only changes I made were I used a 15 oz. can low-so chicken broth (in place of 4 cups veg stock) and I used a can of diced tomatoes with zesty mild green chilies in place of stewed. My superpicky 4-year-old even ate it (of course I had to strain out the chunks for him) and said it made his tongue tingle.

This recipe was so easy. I used a 28oz can of stewed tomatoes and 2 19oz black beans instead of the smaller cans recommended in the recipe. I also added a splash of red wine vinegar and some more veggies(celery and spinach.)This was a hearty meal and quick to make. No soaking! The kids even liked it; especially with a dollop of sour cream.

Good soup on a snowy day! I didn't have carrots. I added 2 tsp of cumin as I really like the flavour. I used one tin of Campbells' Vegetable Stock and a 28oz can of chopped tomatoes. I forgot to add the corn. I let the soup simmer for an hour and mashed it up a bit. It was excellent! I'm looking forward to the leftovers.

Made this last week, and like others suggested, I used low sodium Chicken broth. This recipe was very tasty. My husband doesn't care for thick soups, so he loved this one. Even my mother-in-law liked it and I gave her a copy of the recipe
