1 (10 ounce) can refrigerated pizza crust
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon vegetable oil
1/2 cup finely chopped zucchini
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can Italian diced tomatoes, undrained
1 1/2 cups shredded Mexican blend cheese, divided

DIRECTIONS
Press dough into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 425 degrees F for 4-6 minutes or until crust just begins to brown.
Meanwhile, in a skillet, saute the onion and garlic in oil until tender. Add zucchini; cook and stir for 1 minute. Add the beans and tomatoes; bring to a boil. Boil, uncovered, for 2 minutes; drain. Sprinkle 2/3 cup of cheese over crust. Top with bean mixture and remaining cheese. Bake 8-10 minutes longer or until crust is browned and cheese is melted.

Editor's Note: A combination of Monterey Jack and cheddar cheeses may be substituted for the Mexican-blend cheeses.

I just made two of these for a dinner party last night and there was only one slice left when all my guests had gone home--and then my boyfriend and I polished it off. I'm excited to make this for my vegetarian roommates in the fall (and for myself, too!) Easy, tasty, and cheaper and healthier than delivery or frozen pizza--you won't regret making this.

Woah Baby! This recipe just blew my mind!! I am so glad that I decided to try it out. It is delcious!! I added a sprinkling of chili powder to give it that extra kick. This recipe was so easy to make and well worth all of the fresh ingredients. This would also be tastey as a hot bean dip with tortilla chips on the side for dipping, or even just in a bowl with a fork! Thanks for adding a great recipe to my collection!

It is great to see this recipe! This is something that has been a hit in the house for years great to see that others out there are on the level! One alternative is to use a mild salsa for the sauce and put some frozen corn in the pan when your cooking up the onions. Great way to sue those extra black beans on Pizza night!

I used the toppings on whole wheat pita bread cause I couldn't find the dough where I shop. Makes a nice light tasty lunch.

HUGE HIT! made this alot for parties and everyone loved the flavors! I altered the recipe by using mexican diced tomatoes instead of italian and added black olives, green onions, peppers....delish!

It was okay... but then I didn't have any garlic or canned tomatoes, so I used a bit of salsa instead! :) I actually liked this better the day after - I bypassed the pizza part and just heated up the bean mixture. It was almost like a casserole.
