I made this for my family and they LOVED it. My dad, who is a big meat-eater, raved about it - and he knew there wasn't any meat in it. It's a bit thick, so I messed with the recipe a bit - added two cups of chicken broth to thin it a bit. I also added some salt. When serving, I provided sour cream and 2% milkfat cheddar to top it, with some cornbread muffins on the side. Will probably add one more can of black beans next time I make this. I received rave reviews!
