This salad is SO good! I added a bit more lime juice, but other than that it was great. I made it for a BBQ and doubled the recipe and it was still fantastic. I made it a few hours in advance and still tasted great. I received many compliments and requests for the recipe! Easy and delicious!!

LOVE THIS!! Always a huge hit at potlucks and family gatherings. If available, I prefer to use fresh corn. Everyone asks me for the recipe.

This is very good as written but I like it even better with my personal changes -- I put in more lime juice (1/2 c) than oil (1/3) cup. I actually double the amounts above, add chilled cooked rice, refrigerate and voila! A light main course salad with complete protein.

This has so many reviews but I'll add mine anyway. I tripled the recipe and served it to 60 people along with tacos and refried beans. The bowl was empty in a few minutes. Everyone raved about the salad. They put it on the tacos and used it as a dip with tortilla chips. I've made it 2 times since then and always get asked for the recipe. Thanks for the great recipe.

This is an awsome recipe! Everytime I make it I find new uses for it. It is great alone or as a topping for other dishes. It is best when used fresh becasue the avocado will discolor. It makes a very large serving so don't double it for parties! I usually cut it in half if it is only for our family.

This was really delicious. I found several recipes on this site that were all very similar so I took the pieces I liked from those and modified this recipe slightly. I used one full bag of frozen corn, only 1 can of black beans, half the oil suggested, used the juice from 3 limes and added in 1 teaspoon of sugar. Use red onion instead of green since that's what I had. I really enjoy how fresh and tangy this is. And I love the addition of the avocado for a creamy extra touch.

I loved this dip/salad. I've made it 3 times in the last 3 weeks. I omitted the onions and peppers but added fresh mango and it tasted so fresh and healthy...Perfect for summer! I even made it camping and everyone on our annual family campout raved about the dip and wanted the recipe. Thanks!

I made this as a side to my chicken enchilada's and wow it was wonderful. A very nice sadad with lots of flavor. I used about half the amount of cilantro and it was awesome.

This is a fabulous and versatile recipe and has never failed to be a hit. It is also a nutritional heavy-weight! I find that the measurements of any ingredient can be adjusted to your tastes and the salad will still turn out great. I usually wing it and probably make it differently every time, mostly working with whatever I have on-hand at a given moment. For example, you could substitute a few drops of hot sauce for the cayenne pepper and I almost always use 2 avacados instead of one, because I like the taste/look. I only ever drizzle a bit of olive oil on the salad, finding that there is no reason to add any more than that, so you could lighten the salad up that way, if you wished, without compromising taste. Not only does this salad taste great, but it looks beautiful as well. There are so many colors represented in it, making it really very visually pleasing as well. I would highly recommend this recipe and have shared it with several family members and friends!

This is one of my favorite salads. I always double the dressing and use half for the salad and half if it needs it later. I used cherry tomatoes and shake out the seeds so the salad doesn't get too watery. I also add extra corn..delicious!

I absolutely loved this salad! I only had one can of black beans, so I also added a can of garbanzo beans. I only added half of a red bell pepper and added a finely diced jalapeno with the seeds removed. The last thing I did diffently is I added grape tomatoes cut in half instead of regular tomato. This salad is so light and refreshing, I'll definitely be making it again!

This is the yummiest salad ever! I only put in 2 tablespoons of oil and use a can of corn instead of frozen. I also put in 1/4 teaspoon cayenne pepper and 1/4 teaspoon paprika to make it a bit spicier. For a truly colorful salad, use a green pepper instead of red since the tomatoes are already red. The avocado is a wonderful addition, but many times I don't have one on hand, and the salad is equally as tasty. It is also good with a bit of red onion or no onion at all because it already has so many flavors. I practically have the recipe memorized because I make it so often! I make sure to stock up on all the ingredients when I go grocery shopping so that I can make it whenever I want to. Thanks for sharing Jen!
