Fixed this many times this summer, my DH asks me to fix it more and my relatives all ask for the recipe! I use my own corn that I froze, and everything else the same, maybe alittle more cayenne, We love the kick! It's awesome just like it is, love it!

I had to leave out the avacodo, and subed fresh lemon juice for lime juice (all I had). Still very yummy! Will make again, thank you!

A little cilantro goes a long way, so if you're like me and don't cook with it that often, remember that it's a lot easier to add more than take it out. Also, the amount of olive oil in the recipe is too much! You can get away with using a lot less.

Everybody loves this recipe. I've made it three times now for several functions and I have people taking home containers. My caterer even asked for the recipe. I did cut the olive oil as suggested by several people and made it spicy with about three splashes of hot sauce. Very easy recipe and even a non cook can do this one.

I couldn't find fresh tomatoes when I made this recipe so I bought 2 cans of diced tomatoes and rinsed them well. The comments were they were the freshest tomatoes of the season. I also left out the cayenne pepper. We love this salad and everyone who had it has asked me to bring it to the next event we have.

This is officially my favorite salad. It's extremely easy to make, keeps well, it's healthy, and best of all it is absolutely delicious. I've made it as a side dish for baked Tilapia and also along with grilled chicken, and both meals were a huge hit. I highly recommend this recipe for any meal, but I think you could really impress some relatives if you brought it to a family function.

I brought this along to a barbeque and it was a hit! I especially loved the lime juice and avocado. I omitted the cayenne pepper and added extra lime juice.

Absolutely Awesome! I didn't change anything from this recipe but maybe add a little more avocado. This was fast and easy to make. I will definitely be making this more often. YUMMY!!

Great dish, rave reviews from kids and adults alike. I did make some adjustments based on previous reviews -- for the vinaigrette: 1/2 cup of lime juice and 1/3 cup of olive oil (instead of the opposite), added a bit of honey and 1/4 tsp. of caynne (instead of 1/8); for the salad: added chickpeas, omitted the tomatoes, and used corn cut off the cob instead of frozen. Really delicious!!

This was so good and refreshing. A good way to use some of your homegrown tomatoes. I didn't have an avocado so I made this without it. Also, I was short a little lime juice so I used a combo of lime and fresh lemon juice. Still very good.

made some personal preference changes but this was soooooooo good. We've had it twice and even the baby likes it. Goes very well with light meal of fish or grilled chicken.

I didn't have green onion so I diced thinly a little vadalia onion instead. This salad was a HIT! I've given the recipe to 3 people who tried it when I made it. Dad and I ate the rest up. Delicious. I'm not much of a cook so these simple items are great for me. Easy.
