The dressing is zingy - balsamic vinegar, chili powder, oil and cumin do their magic. Tossed with a salad bowl full of kernel corn and black beans, it 's sensational. We think it would be super rolled in a warm tortilla with a dollop of sour cream.

A tasty lime dressing, with cayenne and garlic added for kick, make this salad a bit different from the one above. Avocado too. And this salad doesn't need to sit in the frig, it can be served to four hungry people immediately.

This recipe is a favorite with my husband and five boys, all hearty eaters. It's filling, economical and, best of all, easy to prepare. I spend many afternoons driving our sons back and forth to their wrestling and band practices, piano lessons, Boy Scout meetings and church activities.
