1/4 cup chopped green pepper
3 tablespoons chopped onion
2 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 3/4 cups milk
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
2 cups cubed fully cooked ham
1 tablespoon lemon juice
BISCUITS:
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons shortening
3/4 cup shredded Cheddar cheese
1/3 cup milk
1 teaspoon diced pimientos

DIRECTIONS
In a large skillet, saute green pepper and onion in butter until tender. Stir in flour until blended. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Whisk in soup until blended. Stir in the ham and lemon juice; heat through. Pour into a greased 9-in. square baking dish. Bake, uncovered, at 375 degrees F for 10 minutes.
Meanwhile, in a large bowl, combine the flour, baking powder and salt; cut in shortening until mixture resembles coarse crumbs. Stir in cheese, milk and pimientos just until moistened. Turn onto a lightly floured surface; knead gently 4-5 times. Roll to about 1/2-in. thickness; cut out six biscuits with a 2-1/2-in. biscuit cutter. Arrange biscuits over ham mixture. Bake 18-22 minutes longer or until biscuits are golden brown. Serve in individual dishes.

Gave this recipe 4 stars because it is a good start and after you use your imagination, it can be fantastic. was a bit plain for our tastes at first. I doubled the milk/flour recipe, added only 1 can of soup, added can of corn and a can of green chiles. added half a bag of frozen diced potatoes and peppers. added some creole seasoning because it really needs more flavor. added minced garlic to the biscuit recipe and dropped them by teaspoonfulls on top of the creamed ham mixture instead of making large biscuits. turned out wonderful and reheats excellent in the microwave the next day.

I'm always looking for something to spice up dinner. This did it! I didn't have green pepper, cheddar, cream of chicken soup or pimientos. And, after reading the previous review, I decided to add a little flavor that I would like. I used cream of mushroom soup, red pepper and mozzarella for the ingredients that I didn't have, then I added a dash of sea salt, pepper and garlic powder for flavor and peas for added texture. I'll make this again and I'll keep playing with it.
