Great for a quick breakfast. I used cold butter in the biscuits instead of shortening and buttermilk instead of regular milk. I got a tip from someone else to bake my eggs in liberally greased muffin tins at 350* for 20 minutes, let them set a minute, then just stick them inside your split biscuits with your cheese and meat. It was less messy for me, I didn't have to fiddle with six eggs and how to portion them AND the eggs held up well inside the biscuit. WA-LA. HUGE hit with my family.

We LOVE these breakfast sandwiches! I have made these several times, and if I'm short on time, I will use a can of Pillsbury Grands biscuits. I crack the eggs in the skillet, and right before turning, I lightly break the yolk, then flip over. I have made these using the ham, and also, bacon or breakfast sausage patties. For a vegetarian version, Morningstar Farms breakfast sausage patties are delicious too, especially the maple type. Sometimes we add a dab of ketchup. Don't be afraid to try different cheeses, swiss with the ham is amazing! Thanks for sharing this recipe, we really enjoy these for breakfast or dinner :)

These are great I usually serve them on breakfast for dinner night or when I can't think of what to have for dinner. The biscuits need to be cut thick.

These are always great for breakfast on the go! I love to make these for my husband because I can make them ahead of time and package them up so he can take them to work. The biscuits were very nice and very easy. I did my eggs for these individually in the microwave so they would fit perfectly onto each biscuit kinda like an egg mcmuffin. I just spray a little butter flavored pam into a microwave safe pudding dish so they don't stick, crack a single egg into it, then scramble it slightly. I microwave it on high for 35 seconds and it's done perfectly. It might take a little longer depending on your microwave but watch it carefully so it doesn't explode on you. I then assembled the breakfast sandwiches using canadian bacon. Any combination of meat and cheese works well with these. It all depends on what you like. You just can't go wrong with these.

I have been making these for a long time, sometimes using bagels or english muffins, sausage, mushrooms, bell peppers, Spam, cheese, or anything else I can find! When cool, I wrap in wax paper and put in ziplocs. Then I freeze and pull out what I need and microwave for a fast breakfast!

Simple, quick and tasty! What more do you need? I only used the biscuit portion of the recipe because we use sausages and bacon for our breakfast sandwiches. I also used lard instead of shortening, only because I dont keep shortening in the house. What I really liked about this recipe is that the ingredient amounts and portion size are pretty much right on the money. Its probably somewhat forgiving too. This was my first time making biscuits and I looked like a pro to my family! I think my son would eat them all day if he could. Thanks for the post.

I loved them biscuits. They reminded me of McDonalds biscuits. I will use this biscuit recipe for other uses other than breakfast sandwiches. I did not follow the directions for the eggs as I make mine differently.

I enjoyed the meal although my 2 children who normally like biscuits didn't care for these. I should have read the directions more clearly as I mistakenly put 8 biscuits (1/2") thick into the oven instead of 6. Had I put all the dough into just 6 biscuits and rolled the dough to 3/4" instead of 1/2", mine would have been larger and risen much higher. These reminded me of Bisquick biscuits.
