ABSOLUTELY DELICIOUS! I did follow the review below and added 1/2 tbs almond extract & 1/2 tbs vanilla extract ..very good...this was my first time making biscotti- i found this recipe very easy didnt require a lot of ingredients...i did find that the dough was very very sticky (could not handle it to shape it) so i spooned half the dough into a lightly greased bread load pan, patted the dough down to flatten it in the loaf pan then turned it over on the greased cookie sheet...then i just patted the top of the dough on the cookie sheet to spread it out...absolutly perfect no stick mess to deal with and the perfect shap for biscotti...A+++++ ( i also swirled dark chocolate and white chocolate on on cut side of the biscotti once it was completely cooled)

This was wonderful! I had never attempted biscotti before so I would like to thank the reviewer that gave the roller and pizza cutter suggestions. It did take less time to cook than stated in the recipe.

Yum yum yum! Incredibly easy and tastes wonderful. My hubby and I aren't big on anise, so I substituted vanilla extract and threw in a little cinnamon. Tasted wonderful!

This recipe was wonderful! Very very easy. I added a little more than a 1/4 cup each of dried cherries and chopped pecans to half of this recipe. And I left out the anise and added vanilla extract. I also melted some white chocolate to drizzle on top after taking them out of the oven. Also, I only baked them for 20 minutes the first time and then about 4 minutes on each side the second time, and they are golden brown and sufficiently crunchy! Thanks for the great recipe!

this recipe is great! i love the anise flavor, but occasionally i will omit the anise and add the grated peel of an orange or lemon along with (1 cup) chopped almonds, pecans, walnuts, or semi-sweet chocolate pieces (any combination of the above works well). i've also found that using an electric bread knife to slice the straight-from-the-oven biscotti loaves works really well. also, i don't flatten the loaves before i put them in the oven, just spray pam on the cookie sheet, divide the dough into two long "logs." works perfectly for me every time.

Really good! I made a batch with toasted almonds, almond extract and 1/4 cup baking cocoa. Delicious and they looked good paired with the regular anise ones.

Great basic Biscotti recipe. You can do so much to customize it, add nuts, use almond extract, etc. Do not let it cool too much before trying to slice the cookies. They will crumble if they are too cool.

I think this recipe would be better with butter instead of oil. I used vanilla instead of anise; perhaps because of this, I found the biscotti a little bland (even with chocolate chips added).

TO be honest as soon as I baked these, I wasn't very pleased with it. It was too sweet and not so good. Now that it is 2 days old, it tastes just right! I did not make any changes in the recipe except that I used vanilla essence instead of anise. I did not find the dough sticky to handle like some said and nor did I get 42 biscottis. Just around 30 or so. All in all it was good and I would be making it again inshaAllah with different flavors.

Perfect. It was my first attempt at biscotti though I have baked extensively, and I was worried when I saw how flat the baguettes were, but sliced they were larger than the usual biscotti you bought at extortionate prices, and tasted infinitely superior.

I really enjoyed this recipe. I did not have the anise so I substituted with 2 tsp of vanilla extract and 1 tsp of almond extract. I also used half real sugar and half splenda, and no one even noticed. I will definitely make this recipe again.

Delicious! I halved this recipe (using 2 small eggs), and dipped the finished product in dark chocolate. This is the best basic biscotti recipe that I've seen to date, and I'm planning on playing around with various flavorings. I love the fact that it's more traditional than other biscotti recipes I've seen (no butter, only eggs and oil), and lends itself well to customizing. My next biscotti hit? Probably orange zest and slivered almonds, with almond extract in the place of anise. And then, some tiramisu with cognac and espresso... the possibilities are endless!

Wow, this is great. I decided to experiment and make this without anise, because I didn't have any on hand, and it's still fantastic. They cut so perfectly, they end up looking like what you would buy at a bookstore.

I make biscotti for gifts and to share. This is my favorite recipe and easily lends itself to modification. I use almonds, dried cranberries, lemon or orange zest and a variety of flavored extracts. It always performs beautifully. I highly recommend this recipe for your collection!
