This is New Mexico's traditional cookie. A great thick sugar cookie that is dusted with cinnamon-sugar. The traditional shape is fleur-de-lis, but use your favorite cookie cutters if you like. 

Ginger Uniques

This is a Spanish cookie recipe that was given to me from my aunt who was from Spain. The cookies need to cook in a very slow oven as you do not want to brown them. 

Polish Christmas Cookies

My mother in law has a polish name for these but my husband and brothers always just called them "Polish Christmas Cookies". They are very easy to make and have a nice anise flavor to them.

These cookies are mixed differently from other cookies (like pie crust) but they are the best. These are the ones I grew up on. At Christmas my mom would add almond extract and green food color then make tree pattern.
