Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 3/4 cup diced onion
  • 1 egg
  • 1 (4 ounce) can diced pineapple
  • 2 cloves garlic, chopped
  • 1 tablespoon ginger, chopped
  • 2 cups Birds Eye® Classic Mixed Vegetables
  • 4 cups cooked white rice
  • 3/4 cup stir-fry sauce
  • 2 scallions, sliced thin

Directions

  1. Heat the oil on high heat in a large saute pan or wok. Add the onion and cook for 1 minute. Add the egg and scramble for 30 seconds. Add the pineapple, garlic, ginger and mixed vegetables and cook for 4 minutes. Add the rice, stir-fry sauce and blend well. Season with salt and pepper and cook for 4 minutes more. Add the scallions and mix well.
