Bing Cherry Gelatin Mold

"Cherry gelatin mold, with bing cherries, pineapple, and pecans. But the surprise ingredient is Coca Cola. This has been my families favorite for many, many years. Originally submitted to ThanksgivingRecipe.com."

INGREDIENTS

  • 1 (12 fluid ounce) can cola-flavored carbonated beverage
  • 1 (16.5 ounce) can pitted Bing cherries
  • 1 (20 ounce) can crushed pineapple with juice
  • 1 (6 ounce) package black cherry flavored gelatin mix
  • 1 cup chopped pecans

DIRECTIONS

  1. Drain pineapple. Drain the cherries and save their juice.
  2. In a saucepan combine the reserved cherry juice with the coke. Heat until boiling then stir in the gelatin. Mix until gelatin is dissolved. Remove from the heat and stir in the drained pineapple, drained cherries and chopped pecans. Pour mixture into a mold sprayed with a non-stick cooking spray and refrigerate for at least 24 hours before serving.

Absolutely one of the most fun and flavorful recipes I've tried. And it was delicious! I used a beautiful and intricate bundt pan from Williams-Sonoma, and I didn't think it would come out whole but it did! It was a big hit with everyone! Thanks Andee!

Very yummy. Now everyone wants the recipe! We made it with bing cherries in syrup but next time I will try cherries in water b/c it seemed a tad sweet to me. But everyone else thought it was fabulous. Will absolutely make again!

This is a delicious dessert. You wouldn't think that a recipe with so few items could be so good...but believe me it is. We only had 1/2 cup of pecans available and even for someone who loves nuts, pecans especially, they were plenty.
