2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon garlic salt
1 teaspoon dried rosemary, crushed
1/4 teaspoon ground black pepper
2 small Vidalia onions, wedged
3 large carrots, sliced diagonally
2 red potatoes, chopped

DIRECTIONS
Heat a barbeque to a high heat, or preheat oven to 400 degrees F (200 degrees C).
In a 9x13 inch baking dish combine olive oil, vinegar, garlic salt, rosemary, and ground black pepper. Place carrots, potatoes, and onions into the dish and toss to coat.
Bake or grill, turning occasionally, until tender (approximately 40 minutes).

Really good. I didn't have any Vidalia onions, so just used a regular white onion. Still very good. I also added chopped garlic rather than garlic salt and added a little extra salt. I will make again for sure. the vinegar adds a really nice slightly sweet touch to the dish.

Great! Made this without the carrots. My 4 year old thought it was yummy. Might try oregano instead of rosemary next time. Tasted like my husband's homefries but they require constant watching.

Pretty good although my roommate didn't really care for them. I took the oven route and only used 1/2tsp rosemary and 1/2tsp oregano. Because I was cooking them at 350 with my chicken, they took an hour to cook, which was okay with me. However, I liked them better when I mixed them in with "Sesame Broccoli" I made, also found on this site. Even though they were enjoyed, there are other potato recipes I prefer over this so I'm not sure if I'll make again or not. Thanks just the same Donna.

I like this. Be sure to cut the potatoes small enough. I didn't, and it took forever to cook through. Next time I will cut them smaller. I also put in 1/2 lb of mushrooms I had on hand. Really good. Maybe a little more salt....
