Beverly's Get Up & Go Breakfast Cookies

"These are delicious alternatives to cold cereal, and kids love them. Barley cereal works just as well. Don't omit the orange peel!"

INGREDIENTS

  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1 egg
  • 2 tablespoons frozen orange juice concentrate, thawed
  • 1 tablespoon orange zest
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup wheat and barley nugget cereal (eg. Grapenuts TM)

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In medium bowl, cream together butter and sugar until light and fluffy. Beat in the egg, orange juice concentrate, and orange zest. Combine the flour and baking powder; mix into the fluffy mixture until blended. Stir in cereal. Drop by teaspoonfuls 2 inches apart on ungreased cookie sheet.
  3. Bake 10 to 12 minutes or until edges are golden. Remove from cookie sheet for cooling.

These are excellent little on the go breakfast cookies. I substituted applesauce for the butter and they came out perfectly. I would definitely recommend doing this to get rid of the majority of the fat. I think they'd probably be good with some white chocolate drizzled over the top, but they're still coming out of the oven, so I have not tried that yet. Thanks for the great recipe!

These cookies were a pleasant surprise-the flavor and texture were delicious-my daughter loved them. We also added raisins to the top. Next time we'll mix in batter. I would recommend this recipe to anyone who has kids.

These breakfast cookies are really tasty. What a good idea! They were pretty quick and easy to make, and a great choice for when you need a quick breakfast on the go! (Almost every day for me). The orange makes the house smell wonderful when you bake them!
