This was super easy and tasted great. I will not however, fry the rice before hand though. It was just a tad bit too crunchy for my taste. Overall, GREAT!

They're right about browning the rice before cooking... it really makes a delicious flavor. I have made this recipe several times and always do it a bit differently. My favorite is to skip the salsa and instead start the whole thing out by throwing a bunch of over-ripe fresh tomatoes and other random veggies into some broth and cooking till they get soft, then putting in the rice. You end up with nice big veggie pieces in the rice that way and it only takes an extra 5 mins or so.

I have wanted to make Spanish rice forever and till today have not been able to get it right - This is an easy and fail proof recipe - Used salsa from our favorite mexican restaurant(which I pureed) and homemade chicken stock (added an extra TB though) - Finally, I have made spanish rice.

The rice wasn't cooked all the way. This recipe needs more liquid. I will add another cup of broth to it, which is how I would normally cook rice -- twice the amount of liquid as rice. Otherwise, great flavor.

Fantastic! I almost followed it to the T. I really don't like my rice to be on the hard side. So I added 1 cup of water to rectify that..

This is an great recipe! Instead of olive oil, I like to use a little bacon grease to sautee the onion, rice, and fresh garlic (three cloves; I really think the garlic adds tons of flavor.) Also, I make my own salsa with fresh ingredients. At the end I sprinkle some fresh chopped cilantro on top. Definitely a great, versatile recipe!

This was fine. I think it lacks a little flavor. Maybe add some garlic or green peppers? Overall, I like it much better than boxed rice!

I think the chicken broth makes all the difference! Keep in mind that the liquid in this recipe may be too much if you live a humid place. I made mine with 1/2 a cup less of broth and it turned it out perfect.

Awesome recipe! I followed the directions with the exception of adding a hint of garlic powder, cumin and salt, and a dash of pepper prior to simmering rice. Very good! All of my family loves...which says a lot since two of them don't like tomatoes!

Wonderful and sooooooooo easy! Based on the type of salsa you use, you may need to tweak the proportions a bit, but you can't hold the author responsible for that. This is so delicious and easy that even some of my Mexican friends now use this recipe.

I make this recipe all the time. Super easy to make and tastes great. I always have to add more liquid and cook it for an extra 10 minutes. If you follow the recipe exactly, it will burn on the bottom and the rice will be undercooked.

This was so easy and great with enchiladas! Why buy the packaged (full of sodium) rice when you can make it from scratch? I didn't change anything in the recipe and don't plan to.

Just made this recipe and it is wonderful, I did add an extra 1/2 cup chicken broth, and some browned chorizo, also did the foil trick, cooked according to directions and it came out perfect. My family went nuts over this rice. I will most cetain use this recipe again.

I used brown rice so i needed more liquid and cooking time. I had never made spanish rice before and i had limited ingredients on hand. I was able to make this and i don't think i'll use another recipe when this one works so perfectly. THANKS!!!
